Marinated Chicken Pita Sandwich

Easy, healthy dinner. I use tzahiki sauce (replace the yogurt), cucumber slivers & lettuce in addition to what he uses. I also have marinated just over an hr and it still works...better longer but you do what you have to do sometimes! Yum.

All-Day Apple Butter

Yum! and you house will smell so good! I agree with the sugar adjustments. If you have tarter apples, used more sugar to cut the tartness, if they aren't tart you can cut back on the sugar as much as 1/2c at least. I don't even peel the apples to save time because once they cook down, i throw my emulsion blender in the crockpot and schush away. You don't even know they are in there. I think it thickens it up a bit too.

Delicious Ham and Potato Soup

So easy, has a slow cooked tasted even though you can be eatting it an hour start to finish. I used a $2 ham steak and was perfectly delicious. I also used skim milk and didn't miss the fat of the whole milk. Do try this winter!

So easy to taste so good. Definately take them out of the oven at recommended time, won't look done but do finish perfectly while resting. And not overly sweet as some can be.

Cheese Sauce Over Cauliflower

Super easy cheese sauce. I did add a bit of salt and some Mrs. Dash to give it a little bit of something extra. I also cut my cauliflower into florets for quicker cooking and more cheese area!

Chicken Souvlaki Gyro Style

We will keep this as a good, easy, fast meal! I had Sandwich Thins by Oroweat on hand so used that instead of the pita and I had the Tzatiki in the fridge. I also did not have the time to marinate the chicken that I cooked on my stove top grill pan. It was delicious without so I can't wait to marinate next time. My 7 yr old even ate it up. Thanks to Chris J.

California Grilled Veggie Sandwich

Yum! My meat and potato hubbie ate his and 1/2 of my son's. Even my 7 yr old loved it, it was just too much. All on a stove top grill pan, I grilled the squashes, red onion, red pepper and lightly warmed tomato since they tend to fall apart with too much grilling. Next time I will lightly toast the focaccia before putting on the spread although my hubs loved it as is. Don't skimp on the feta, it makes every bite better! So so good.

Uncooked Banana Pudding

Do not be afraid of the sour cream! It is so good. not too sweet like some can be. I used light sour cream and skim milk. Was not too soupy like others turned out. I started with a thin layer of pudding then the cookies so that they would soak up the goodness faster.

wow wow yum! this was the best mac and cheese we have ever had. it is moist without being so fake cheesy...i used the healthier version of macaroni and threw in a handful of mozzerella too. i would make this for anyone/anything!

The best marinade yet, my husband said. I used regualr OJ but will def use the concentrate next time b/c I think it would be sweeter and cut some of the soy's saltiness. It was so good!

Caramel Popcorn

So good. I used a tip from another recipe to mix the carmel and popcorn in a paper bag sprayed with Pam - no clean up! Also I added broken pretzles! Thanks!
