About this Cook
Our Mom instilled the importance of family dinner time and every evening made wonderful meals for our family. We always joked that Mom could make a 4 star dinner even if there were only 2 cans of food in the cupboard! We think it had to do with the love she put into her cooking!

New recipes! I love to explore and buy unique, fresh ingredients for new recipes! Our local farmer's market is perfect for ingredient searches! Also, healthy, flavorful, filling vegetarian meals!
My favorite family cooking traditions
Every Christmas Eve our Mom makes Seafood Madagascar (a phenomenal creamy seafood recipe with linguini from our church cookbook)...we look forward to it all year! Absolutely Spectacular!
My cooking triumphs
My Mom, sister, and I made an exciting Indian dinner with homemade Naan, kheer, shak, dahl, paneer, the list goes on...it was a very tasty and HUMBLING adventure!
My cooking tragedies
Apple cornbread dressing at Christmas...still can't figure out what went wrong, but served it with a smile! :)

Chicken Wild Rice Soup
This was a great recipe. I omitted the chicken and used vegetable broth instead of chicken broth. Very hearty. I will definitely make this again.

Spinach Cheese Tortellini
Great recipe! I made this tonight as the main course for a gathering of 12 people so I DOUBLED the recipe. I omitted the mushrooms and instead sauteed 1 onion and 2 garlic cloves in only 2 TBSP of butter. I used halved cherry tomatoes in place of the chopped tomato. Very nice. I also reduced the amount of light cream cheese to 12 oz. Next time I would increase the amount of sauce (by adding milk) since the sauce reduced a bit in the crock pot. I would have preferred a little extra sauce on my plate to dip some nice crusty bread in. I highly recommend this recipe, it was well liked both by kids and adults.

Cinnamon Maple Granola
Excellent recipe! I used quick oats, honey instead of corn syrup, and peacans in place of the coconut. Very nice. I tripled the recipe and found that baking it on two cookie sheets for 30 minutes worked well. I will definitely make this again!
