Mexican Rice II
Very similar to the rice my Mexican neighbor makes. I also used 1 1/2 cups of chicken broth and 1/2 cup of enchilada sauce. Since the enchilada sauce has seasoning in it, I cut back on the cumin. If you like traditional mexican rice, you won't be disappointed with this recipe.

Easy-To-Stuff Manicotti
Good and easy. Used spaghetti sauce with italian sausage and topped them with an italian cheese blend. Served with salad and garlic toast.

Sausage Stuffed Jalapenos
Stuffed these last night, baked them this morning and brought them to work. They are almost gone in less than 30 minutes. Very tasty. I used Bob Evans Hot & Spicy sausage and a shredded three cheese blend of romano, parmesan, and asiago cheese.
