Pasta with Tomatoes and White Beans

Quite tasty; we modified by using 1 can diced tomatoes and 1 can tomato sauce, a package of frozen spinach sauteed in olive oil with onion and garlic, and romano cheese. The addition of garlic powder and italian seasonings gave it great flavor.

We were definitely underwhelmed. The cheese was gritty and rather tasteless even though we used mexican velveeta and added onion, garlic and cumin for flavor. We won't be making this again...thanks anyway.

Very tasty. I followed other reviewers' advice ad subbed chicken broth for water, 15oz tomato sauce and 15oz diced tomatoes for the large can of tomato sauce, added 1/2 pkg frozen spinach and only used 1/2 lb ditalini pasta. I would add it to the bowls next time as the noodles absorbed a lot of liquid.

Bran Muffins II

Wow....these were awesome!!!! We were looking for a way to add more bran/fiber in our diet and these muffins take the cake (ha ha...) We followed the advice of another reviewer and subbed 4T of honey for 2/3c white sugar, subbed whole wheat flour for half of the all purpose flour and sprinkled brown sugar on top. I also added about 1 t of cinnamon to the batter and made some raisin/walnut muffins and some choc chip/walnut muffins. My husband loves them and they would be great for company...make the batter days ahead of time and just bake them fresh in the morning!

We made this with sweet dumpling squash and really enjoyed it. My husband typically doe not like vegetarian meals but commented that this dish was very satisfying and didn't need meat. My infant had a few bites of the flavored couscous and couldn't get enough!

Sausage Barley Soup

Really good; I also used spicy sausage, added more italian seasoning, doubled the barley and used more chicken broth since the extra barley absorbed the liquid (9 cups). It hit the spot on a cool fall day - it would be perfect with a crusty bread.

Chocolate Chip Orange Zucchini Bread

This was a great zucchini bread recipe - a litte different from the norm. I did the usual applesauce for oil substitution and added a teaspoon of orange extract for additional flavor. I upped the amount of cinnamon to 3/4t, reduced the nutmeg to 1/4t and addd 1/8t of cloves. We'll be making this often with our bumper crop of zucchini.
