Amaretto Sweet and Sour

So refreshing! I used to make Amaretto Sours from a recipe out of a bartenders guide that didn't include the O.J. but this version is much better and I'll be using it from now on. Thanks!

Lemony Garlic Shrimp with Pasta

This needs a lot more flavor to be a good recipe. As is, there's way too many noodles and not much else. The butter, the wine, even the hot pepper aspect gets lost. I'm sorry I didn't enjoy this as much as others who have tried it, but I couldn't justify any higher rating on something so bland. It takes a lot to get my family to not like shrimp dishes, but this did it.

Hot Bacon Dressing

This was so good! I didn't have a few ingredients and had to substitute. I used red pepper for the pimento by adding it with the onion to saute. And I also didn't have cider vinegar and substituted red wine vinegar with a splash of white vinegar and balsamic vinegar in it. It turned out really well even with these changes. Thanks for a great recipe!

Cream Of Chicken Soup

My 11 yr. old daughter decided to make this for supper one night. We did alter the recipe a bit. We didn't add the sugar to this recipe, just didn't feel it needed it. The chicken was seasoned as it cooked with some herbs and finely diced onions which we then added to the soup as well. We also added a little bit of dry white wine to the roux for extra flavor. I love the idea of using this recipe as a lower fat/lower sodium cream of chicken in place of canned soups. We did try it just as is and it wasn't bad. I just normally wouldn't eat cream of chicken soup plain. Overall easy recipe and I'll be using it again for a canned soup replacement.

Puff Pastry Salmon

These were great! Rolled out the puff pastry on a floured surface and had no trouble getting it to cook up. I didn't have pesto so I made a garlic and herb blend sauce to use in its place and it was great. I think this recipe could be very versatile. My family really enjoyed this and we'll be trying it again with the pesto.

Easter Breakfast Casserole

Perfect breakfast casserole. I browned the bacon and crumbled first before adding to the casserole. The directions don't specify, but it turned out well this way. I used Bob Evans Hash Browns that are kept in the refrigerated section of the grocery store, which also made this recipe quicker and easier rather than having soggier thawed hash brown potatoes.

White Chocolate Raspberry Cheesecake

This is a delicious cheesecake. Only four stars though because it is one of the most time consuming and messy recipes I've made (and I cook a lot of gourmet foods) and I ended up with a lot of extra "batter". I hated to waste it, but that's what ended up happening. The end product was great though, and I would love to have this again.

Pretty good. The capers weren't well blended into this recipe. I think if they were warmed into the recipe a little longer, maybe added while the chicken was browning it would have been better.

Fast, easy, and fabulous. Everyone who tries this recipe says it's to die for. I drizzle chocolate sauce over the finished product, and use a chocolate cookie crust instead of graham cracker. Perfect.

Spicy Peach-Glazed Pork Chops

The glaze for this was amazing. Tasted like what is found in a lot of Americanized Chinese-style restaurants on their meat...from chicken to beef to pork. Spicy/sweet combo was very good. The cinnamon and ginger on the meat was good on the pork chops but I think I'd leave it off any other cut of meat. Overall, a great recipe that I'll be using to make all kinds of great dishes. Thanks for this one!

Pork Tenderloin alla Napoli

This was okay, the olives made it quite salty. I think it would be better with chicken prehaps. Or as a bread topping...like a bruchetta-type appetizer. Something just seemed a little off about this whole dish. I don't think I'll be making it again.

Cheesy Ranch Potato Bake

I made it exactly as stated and my guests really like this side dish that we served with grilled steaks. It wasn't very spicy so all the kids ate it, although if I were making it for just adults, I would have definitely added some extra chili powder and maybe even some sliced hot peppers to spice it up some more. Overall, fun recipe that could be altered easily to fit your wants.

Mascarpone Stuffed French Toast with Peaches

This recipe was wonderful! The subtle flavors of the lemon in the marscapone and the nutmeg in the peaches really made an exciting, yet warm/comforting breakfast. My husband stated that he much preferred this breakfast to anything else we've had before because it's not overtly syrupy sweet like so many other french toast/pancake recipes. The only changes I made was using canned peaches as this was a last minute recipe and I didn't have fresh. Since the canned peaches were already sweeter than fresh I did not add the granulated sugar, but just left in a little bit of the light syrup it came in and then seasoned according to the recipe. I also used plain bread slices as I've never even seen Mexican Bolillo Rolls in my small northern town. I will definitely be using this recipe again in the future. Thanks so much!

Land O' Lakes makes the fat-free half and half in this recipe but I'm not sure if it's available everywhere. If you can't find the fat-free version, it's also just as good with regular half and half or cream, just more calories. Also, I would suggest this drink not be made in batches. The cream will separate a bit and make it less visually appealing after it's been sitting for awhile. Best to make them as you're drinking them even if you're serving more than one. Also, you can double the orange juice for more of a cocktail and less of a martini if you want to go a little lighter on the alcohol. Lastly, I almost always use Simply Orange or fresh squeezed orange juice for this recipe. It really does make a difference in the flavor vs. a reconstituted O.J. Hope you all enjoy this recipe as much as I have. :D
