Mom's Best Peanut Brittle

Easy and sooo good! After the temperature reaches 250, watch it closely. After that point it climbs to 300 faster than you'd think! And using a candy thermometer is so much easier than trying to get there with a glass of ice water.

Fresh Spring Rolls With Thai Dipping Sauce

I make these all the time for a quick, light dinner. My favorite dip is quick peanut sauce - 2T hoisin, 2T peanut butter, 1T light soy. Slowly drizzle water in until it achieves a smooth texture.

Cream Cheese Frosting II

I don't like cream cheese frostings, finding them sticky and "cheesey" Cheese belongs on a cracker, not on a cake. I made this recipe at the request of the birthday boy, and was astonished to discover that it's OUTSTANDING! It's rich, not overly sweet, and decadently smooth. Recommended!

Extreme Banana Nut Bread 'EBNB'

I've made this three times and the texture is somewhat wet. I think I prefer something a bit less damp. And the flavor is a bit lacking. My bananas were saved in the freezer after getting brown, so maybe that has something to do with it...

Best Ever Banana Bread

This is the banana bread my mother warned me about. I can't stop eating it! The thermometer in my oven read exactly 325 degrees, but after only an hour my nose warned me it was done. The texture is perfect and the flavor is heavenly. I used to use a recipe off this site that uses twice as many bananas, but that's absolutely pointless when this recipe comes out tasting so much better.

Beef Egg Rolls

It takes a while to make these, but the result is absolutely incredible! I like a lot of meat in my egg rolls, so I decreased the cabbage content by about 1/3. It made about a dozen egg rolls that were the best I'd ever had. I can't stress enough the importance of getting them rolled TIGHT! A little water spread on the top flap sealed them up well.

Creamy Peanut Butter Fudge

This recipe was easy to make from basic ingredients I already had on hand, and got rave reviews from the peanut butter lovers in the family. It did come out smooth, but was just a bit soft for my taste. The consistency is like cookie dough. Tasty!
