Double Tomato Bruschetta

YUMMY! I did take shortcuts as advised by others. 2 cans petite diced tomatoes, and 1/2 of a 9oz jar sundried tomato spread. Also, as others suggested, I brushed the bread slices with oil and baked @ 400 for 5 min. Added the tomato mix and cheese and baked 5 more minutes - they were perfect!

BBQ Tuna Fritters

Yum,Yum. I left out the green onions because I didn't have any and I didn't know what savory was so I added 1 t. Salt & Spice, 1 t. Spicy Pepper, 1/2 t. ground pepper. It was delicious! I ate mine in a wrap with mayo, tomato & lettuce but my kids ate them plain. This is a definite keeper. Thanks!

Whoopie Pies

I've never had nor made Whoopie Pies but thought I'd give it a try and these were fabulous. I did add the large box of chocolate pudding. I was VERY concerned about the filling - it just sounds gross. But I made it exactly as written in this recipe and refrigerated overnight. They were wonderful! The one confusing thing for me was that I had a lot of filling left over (I made two batches on two separate days with the same result). Perhaps I wasn't putting enough in but it sure seemed like a lot. My kids LOVED these. Thanks for the great recipe!

Tortellini Chowder

Perhaps my peppers weren't spicy enough but the main taste my chowder had was of Cumin. It took a long time to chop all those veggies - not worth the time I put into it.

Easy Mac and Cheese Muffins

I did not try the recipe as-is. I minced and sauteed a small onion in the butter, then added 1/4 teaspoon dry mustard. Instead of the 1 cup Milk, I added 1/2 C Half N Half to the Macaroni after draining, then added the onion/butter mixture and cheeses (I used what I had in the house which was 1-1/4 C Monterey Jack/Cheddar, 1-3/4 C Sharp Cheddar. Out of 3 kids the good eater among them asked for seconds. The pickiest one said No Thanks, the other thought they were okay. I, on the other hand, thought they were terrific which means I need to cut back on the onion and definitely leave off the crumb topping.

Artichoke and Roasted Red Pepper Dip

This was delicious! I added 1/2 Cup Monterrey Jack Cheese as others had recommended. I couldn't find jars of roasted red peppers, so I also did my own - which was MUCH easier than I expected. I used 2 Red Peppers - cut in half lengthwise, clean out seeds, place on broiler pan. I drizzled Olive Oil over the top, broiled, turning every 1.5-2 minutes until the tops were charred. I immediately placed them in a brown paper bag to cool. When I was ready, I simply peeled the skins off and voila - I had roasted red peppers! I took the leftovers and mixed them with brown rice. I then had a couple of lunches on wheat tortilla wraps - wonderful!
