Carne Guisada I
Sorry, but I can only give this 3 stars. I followed the recipe with only 1 small change, using a can of diced tomatoes with chipotles instead of stewed tomatoes. Even adding the chipotles, this was way too mild on the heat scale. But my main complaint was the overwhelming tomato flavor. A can of tomatoes, plus 2 chopped tomatoes (and I only used 2 med roma's) overpowered the dish. I will keep looking for my go-to carne guisada recipe.

Oatmeal Peanut Butter Cookies
I've made these twice now and they were a hit both time. I rate this 4 stars as is. Perfectly baked at 11 minutes in my oven. Be sure to let the cookies cool well on the baking sheet before moving them to prevent crumbling. I modified the recipe the second time, adding 1/2 cup more oats and 1 cup semi-sweet chocolate chips...definitely boosted it to 5 stars!

Artichoke Chicken
WOW! This is incredibly easy and incredibly delicious! I had 5 chicken breasts and sliced them into strips before cooking for easier serving and faster cooking. I also increased the topping ingredients some to accomodate the extra chicken. To lighten this up some, I used 1 cup Reduced Fat Parmesan, and a ratio of 1/4 cup mayo to 3/4 cup Light Sour Cream for the mayo (thanks to suggestions from other reviewers!). I had no garlic pepper, so I sprinkled garlic powder and a little fresh cracked pepper on the chicken and in the topping. I also added some minced onion to the topping. I added NO additional salt; this was plenty salty from the artichokes, parmesan, etc. I sprinkled a little 2% shredded 4-cheese blend on the top for the last 15 minutes. Total cooking time was about 40 minutes and the chicken was perfectly cooked and very juicy. Rave reviews from my 3.5 yr old and my parents, and neither my father or my child is a fan of artichokes! I will definitely make this regularly!
