Creamy Vegan Corn Chowder

Overall, I really liked this chowder. I did make a couple changes per other reviewers suggestions, and would make a change or so myself after making it. One, I added a cup of creamed corn to the other corn, and would do that again. Two, I added some arrowroot powder in addition to the flour to help thicken it up. Also, I used almond milk instead of soy and it came out just fine. In addition I just did salt/pepper and garlic powder to taste and no garlic clove. And oh yeah, I used veg. broth 2 1/2 cups...and I added about one large potato. Here are the changes I would make next time. I thought it tasted pretty strongly of carrots, so I would halve them or omit. I might also add a little soy creamer to add some more body. Other than that, its great. Definitely add potatoes though, they really make the dish hearty enough for a meal!

Vegetable Cashew Saute

I made this the other night and thought it was good, but agreed with another reviewer that found the vinegar flavor a little strong. I added tofu and omitted the edamame and it was tasty and filling. I also used one package of udon noodles (8.8 oz.) and it was plenty of noodles for two people. Also, if you haven't used sesame oil before, be really careful - it gets hot very quickly and can spatter everywhere if you don't add the veggies fast enough.

Baked Whole Cauliflower

I made this the way others suggested by chopping up the cauliflower etc. My bf is vegan so I used veg. broth to simmer it in and didn't use cheese on his half. Honestly, I think it was equally yummy on both halves, so don't be afraid to make this without it. The butter and breadcrumb mix gives it plenty of flavor.

Pasta Primavera with Italian Turkey Sausage

Vegan Agave Cornbread Muffins

These were very good. I hesitated for a minute on the five star rating because they are a little different from a standard corn muffin, but they still deserve 5 stars for their own taste. They are a little sweeter than regular corn muffins but they are the best vegan corn muffins I've made. They are moist and stay that way-other recipes have only been good the day I made them. They also get points for the wheat flour. So I say try them!

Lentil Chili II

Yummy! I gave it four stars because like other reviews said, I did need to add spices and I also used the whole can of crushed tomatoes. I also added red and green bell peppers and a small can of corn (kept the carrots but skipped the celery) and I think the corn made it extra good. We ate it with the vegan agave corn muffin recipe on this site and it was an awesome dinner!

Roasted Squash Soup

Really tasty recipe. I gave it four stars because I would have liked it to be a little smoother, but that might be from something I used instead of the recipe. I used gala apples, butternut squash, acorn squash and a frozen winter squash puree I bought at whole foods. Five stars on the taste!

Tofu Quiche with Broccoli

Really yummy, especially for broccoli lovers like me. We used the hash brown potato crust and it tasted delicious and cut some calories as well! I was a little short on tofu but it didn't matter.

I just made this with the right amount of baking soda. I halved the recipe so used about 1/2-3/4 of a tsp. and it came out nice and moist and yummy!

Addictive Sweet Potato Burritos

This recipe is 5 stars...with a couple additions. I pretty much followed the amounts of all ingredients, but did halve the amount of water. Don't be afraid of the soy and mustard, it gives it an unusual taste, and one that goes great with the sweet potato. I also added a little syrup to the potatoes as others suggested. But what I think made this recipe 5 stars was adding sauteed onions and peppers (with some garlic salt, garlic powder and fajita seasoning, and serving it with avocado, sour cream and salsa. I think the cheese and sour cream can be optional as long as you have avocado though. I also chopped up some tomatoes but they didn't really need that. Next time I think I will put the peppers and onions right in the burrito, and maybe just use a bigger tortilla. Anyways, great recipe, my boyfriend and I both loved it-thanks!
