Fruit Salad in Seconds

I made this for work the other day and everyone loved it. I added a little strawberry cool whip with the yogurt and it was really good. Based on another comment I added some peaches and they were a great addition. This is an easy, healthy go to recipe that I'll use a again.

Tomato-Cream Sauce for Pasta

This is a really good recipe. I have made it several times and my husband would have me make it several times a week if he could! To make it more "hardy" I added about 1/2-1 cup of beef flavored TVP (I'm vegetarian)- tastes great!

Cranberry Swirl Coffee Cake

I tried this the first time in a bundt pan and it was too dry (though my in-laws loved it). Tried it a second time in a loaf pan and it was much more moist, I practically ate the whole thing by myself. Definitely double the cranberry sauce.

Rich and Creamy Roasted Eggplant Soup

I thought this was pretty good. I used half and half instead of cream and veggie broth instead of chicken broth. I felt it was missing a little something, but that could be I didn't have fresh thyme and had to use dried. Next time I'll use olive oil and fresh thyme. Will definitely try again.

Cranberry-Pumpkin Cookies

I made these one night b/c I had left over pumpkin and had to take them to work the next day b/c I kept eating them! However, I took them to class before work and there weren't that many left for my co-workers. Nice cakey texture, very light. Great recipe!

Vegetarian Sweet and Sour Meatballs

These are awesome! I made them twice in one week. I took them to a Halloween party for a veggie option and they were gone within minutes and then I made a second batch later that week- they reheat really well. One thing I changed was to make the "meatballs" slightly smaller the second time. I had no problems with them being too mushy at all. Great recipe!

Sweet and Sour Seitan

This was really good, my boyfriend (who has been known to scoff at my attepmts to "vegetarianize" meals) ate two servings! The only complaint was that it was a little too sweet, so next time I may cut down on the brown sugar a little bit.
