Spooky Halloween Eyeballs
These remind me so much of my favorite peanut butter ball recipe, which is the same except that it calls for semi-sweet chocolate instead of white chocolate. The recipe is time consuming, but worth every minute! I took these to a halloween party, and received rave reviews, not only for the presentation, but for how delicious they are!

Chicken with Chipotle
Absolutely one of the best meals I have ever made given the simplicity. I even took a shortcut and skipped the blender. I just crushed the peppers coarsely with a wooden spoon while making the sauce. All my three boys gobbled this up and reqested it for lunch the next day. Simply OUTSTANDING!!!!

Sugar Snap Peas
This recipe is simply too great for words! I am a gourmet cook, and have found very few recipes that are really delicious to be this simple. I used the exact ingredients called for, but admittedly, didn't use perfect measurements. I probably used a little extra olive oil, just enough to coat the peas generously by tossing them on a foil-lined cookie sheet vs using a brush. I used fresh shallots generously, and had fresh thyme on hand, which I think is key to the wonderful outcome. As for the sugar snap peas, I cannot imagine anyone using frozen in this recipe, and thinking that it could possibly be a reasonable substitution!Thanks a bunch CJCOLLINS for this amazing recipe!
