Sunset Tomato Soup

I really enjoyed this soup! I didn't bother peeling the tomatoes, and I also added about half of a green pepper when I sautéed the onions and carrots. I also added two cloves of minced garlic. I would probably omit the dill next time. It seemed unnecessary to me.

Brooke's Best Bombshell Brownies

WOW, these were fantastic! The only changes I made were that I used all brown sugar (that's what I had) and maybe 1/4 c. of chocolate chips (again, all I had). I baked half the recipe in an 8x8 pan, then the other half. I really enjoyed these! Chewy, fudgy, and sweet! I can't wait to experiment with this recipe to make "turtle brownies," "mint brownies," "mocha brownies," etc. Thanks for sharing!

Chinese Fried Noodles

I made numerous changes to this recipe. I used some broccoli instead of carrot, white onion instead of green, and peanut oil instead of sesame, since that's what I had. I also added some garlic and ginger puree to the oil before I cooked the vegetables. I didn't know how much soy sauce to use, so I put in about 4 tablespoons or so. Also, I added a little tofu in lieu of meat. I'm rating this a 3 because without the extra spices I added, it would have been very bland. I will definitely make this again, though with my improvements--and maybe with some ground black pepper, too.

Homemade Black Bean Veggie Burgers

These are excellent! I omitted the hot sauce, since I didn't have any, and I didn't bother with a food processor; I just chopped the onion and pepper up finely. I added a dash or two of pepper and I put in a total of 3/4 c. of bread crumbs. They formed up nicely and cooked just fine in the oven. Delicious!

Spinach Lentil Soup

This is really good and really easy to make! I used half the amount of salsa, an extra cup of water, a little extra lentils (maybe an extra eighth or quarter of a cup? Not sure; the bag's in metric), and I added a little green pepper and a small can of corn. I chopped the carrots instead of shredding them. I also added 2 small packets of vegetable boullion powder, and some chopped roasted garlic in the sautéing phase. Delicious and so versatile! This is the second time I've made this recipe, and I love it. Thank you so much!

Vegetable Shepherd's Pie

This was a good basic recipe, but I think there should be a little more flavoring to the vegetables. Maybe some salt and pepper, maybe a little paprika? I mashed 4 medium-sized potatoes, and it was just enough for the top. Next time I'd make 5 potatoes' worth, just for a little extra.

Brown Rice, Broccoli, Cheese and Walnut Surprise

This was really good. I omitted the walnuts and mixed about half the cheese into the dish and baked it with the other half of the cheese on top. I will definitely make this again!

Tofu Parmigiana

This recipe was great, except my tofu fell apart before I could get it in the pan. I will have to squeeze out a lot more water than I usually have to squeeze out next time, but I will definitely be making it again! Yum. It was better the second day than the first!

Creamy Veggie Potato Stew

This was really good! After reading other reviews, I cooked the carrots and celery with the onions. I also added garlic to the butter and vegetables. I added much more paprika and pepper than were called for in the recipe, and it wasn't spicy at all. I also salted the water when I cooked the potatoes, which I diced. And I added some frozen peas toward the end of cooking for color. It was delicious, and I can't wait to tweak it again sometime with some cheese and other vegetables.

Vegetarian Burrito Casserole

This was okay. I omitted some of the tomatoes because of the tomatoes and salsa, and I used cubed zucchini and some canned corn instead of the soy crumbles. I didn't have any jalapeños, so I didn't add them either. I think this would be better with just salsa (no tomatoes) and some kidney beans. I may try this again with these modifications.

Seven Layer Tortilla Pie

I really liked this. I used not only mashed pinto beans, but also mashed black beans. It was pretty tall, but it didn't fall apart like I expected it to. My husband and I both enjoyed it. I'll make it again sometime!

Tofu and Rice Stuffed Peppers

This recipe was excellent! I cooked the rice in the rice cooker while the tofu was in the pan. As others suggested, I added basil, more garlic, oregano, salt, and pepper to the tofu. I mixed the rice with the tofu and about 3/4 c. of the marinara sauce, skipping the cheese in the mixture itself. I stuffed the peppers, put them in the pan, and sprinkled cheese on top. They were delicious with extra marinara on them, and they made for excellent leftovers, too! I'll definitely make this again.

Cheryl's Spinach Cheesy Pasta Casserole

This recipe was really good with the cheddar cheese! I used fresh spinach, which I sauteed with olive oil, garlic, and a little salt and pepper. I also grated a little Parmesan in with the pasta/spinach/egg/oil mix. And I used penne pasta, only because I found it cheaper. Yum!

Baked Fried Eggplant

Love it! I added my own Italian seasonings to plain bread crumbs, and decided to use plain yogurt instead of sour cream. I will definitely make eggplant this way again in the future!

Fabulous Zucchini Grinders

These truly were fabulous! I didn't want to buy rolls just for these, so I served it on top of lightly toasted bread like an open-faced sandwich. Excellent, and very easy and quick if you've already got the marinara handy!

Tomato Zucchini Casserole

I had to use more cheese than the recipe called for. Also, there was a lot of watery stuff in the bottom of the pan. Maybe I didn't seed the tomatoes enough, but that made it somewhat unappealing to eat. It was okay, but I don't think I'll make it again.

Simple Marinara Sauce

Fantastic sauce! I added extra garlic, and since I didn't have crushed tomatoes on hand, I just used a can of diced tomatoes and mashed them a bit in the pot. I eyeballed the measurements, and it turned out great!

Pasta Melanzana

This recipe is great! I halved it and used only 1 tablespoon of olive oil instead of the 2 that halving the recipe would've called for. I also used a little more spinach and a little less lemon juice than what was called for, but it had enough lemony flavor for me. I will definitely be making this recipe again in the future!
