Coconut Pecan Frosting I

I am a die hard coconut hater from way back and I can barely tolerate pecans but this frosting is excellent. I used it on Dark Chocolate Cake II from Allrecipes. I usually tweak a recipe a little but this I made exactly as directed and it turn out great. This recipe has earned a permenant spot in my collection.

Cheesecake Topped Brownies

These are the world's most decadent brownies! I used the fudgiest brownie mix I could find and topped them with a bittersweet chocolate ganache. I cut them into twelve large squares and took them to the local farmers' market. I sold out in record time and got requests for more the following week.

Sweet Potato Cake

Cake turned out light, moist, and delicious. I didn't have dark brown sugar on hand so I used light brown. Couldn't find the allspice so I used nutmeg instead. I increased the amount of sweet potatoes to 1 1/2 cups and added a cup of sour cream for extra moistness. I frosted the layers with cream cheese frosting. This cake has the perfect texture with just the right level of spice. This one's a keeper.

Focaccia Bread

My only regret with this recipe is not making two batches. I prepared the dough as the recipe directed and had no problems with it rising. I used a roasted garlic oil instead of olive oil and I topped the dough with a mixture of parmesan, cheddar, and mozzerella cheeses. The bread turned out cheesey and garlicky with crisp edges. I was surprised at how easy it was to make. This recipe just made my permenant files.

Dark Chocolate Cake I

This recipe make one huge, moist, rich, decadent chocolate cake. 3 layers of chocolate heaven. I added one tablespoon of instant coffee to the chocolate/water mixture and I used cake flour instead of A.P. I frosted it with Rich Chocolate Frosting from Allrecipes and polished off a piece for dinner tonight. I usually don't replace an entire meal with dessert but this was worth it. Bravo!!!

Chewy Caramel

I'll never buy another bag of caramels again. I cooked the caramel until it reached 250 degrees and used it to dip apples. They turned out wonderful. I had enough caramel to cover 15 apples. You can also make this a day ahead and reheat it with no problem. Next time,I'm making turtles.

Irish Cream Chocolate Cheesecake

One of the best cheesecakes I've ever made. I used 1/2 cup Irish cream and 1 cup sour cream. When the cheesecake cooled I topped it with a chocolate glaze. It turned out very creamy. Will be making this one often.

Baked French Fries I

Perfect if you are trying to stay away from fried foods. I usually add about a tablespoon of parmesean cheese. I'll take these over fried french fries any day.

Peanut Butter Frosting

Very rich and creamy. Used milk instead of cream and only needed 3 cups of powdered sugar. I spread it on Dark Chocolate Cake II from this site, chilled it,and then drizzled Satiny Chocolate Glaze, also from this site, over the cake. Delicious.

Apricot Brandy, Peach Schnapps Pound Cake

One of the best pound cakes I've tried. I always use more brandy in the batter than what is called for and I use a pineapple-apricot preserves in the glaze. Stays moist a long time. Takes a little time and effort but it is well worth it.

Pizza Dough I

A very good pizza crust. I let the dough rise for an hour before patting it into the pan. I used a deep dish pan greased with garlic butter for extra flavor. Will make again.

Texas Lizzies

I HATE FRUITCAKE!!!!! But these cookies are absolutely delicious! I used green candied cherries and candied pineapple and soaked them in whiskey along with the raisins for about an hour. I also toasted the pecans before baking. I only baked half of the batch and served the cookies at Christmas dinner. A few days later,by popular demand,I was baking the rest of the batch. These cookies are so moist and chewy. They have become a permenant part of my holiday baking.

Peppermint Patties

I made these patties as a last minute addition to my holiday treats and boy am I glad I did. They are heavenly and really easy to make. In addition to the peppermint extract,I added a teaspoon of vanilla extract and I only needed 3 cups of powdered sugar. In my opinion,these taste a whole lot better than the national brand we all know.

Anniversary Chicken I

One of the best chicken recipes I've come across in a while. I marinaded boneless skinless chicken thighs in the teriaki sauce for about an hour then followed the recipe. I used sweet yellow onions instead of green onions and chopped up some leftover strips of bacon and mixed it with the sharpest cheddar cheese I could find for the topping. I would suggest adding the cheese and bacon during the last 5 minutes of baking. Served it with hot buttered rice. I'll be making this chicken often.

Satiny Chocolate Glaze

This is the best glaze I've ever tried. I don't have a double boiler so I melted the chocolate chips in the microwave instead. I used this glaze in Chocolate Lover's Favorite Cake and Chcoclate Cavity Maker Cake from this site. This will be the glaze I use from now on.

Chocolate Ganache

Quick and easy. Used half and half instead of heavy cream and a mixture of bittersweet and semisweet chocolate. I refrigerated it, whipped it, and then spread most of it between the layers of Dark Chocolate Cake II from this site. The rest I ate straight out of the bowl.

Dark Chocolate Cake II

This recipe made a excellent birthday cake. Very rich and moist. I used one cup of cocoa for a more chocolatety taste. The coffee is an important ingredient. It brings out the flavor of the chocolate without giving it a coffee taste. I made two 9" layers and spread a whipped chocolate ganache between them, then frosted the layers with Rich Chocolate Frosting from this site. Another must-have for chocolate lovers.

Slow Cooker Manly Stew

Good recipe. I added a can of sliced mushrooms,a bag of frozen vegetables and served it over garlic mashed potatoes. Very tasty.
