Tangy Poppy Seed Fruit Salad

I was craving fruit salad today and this hit the spot. There's no need to change a thing, but fresh fruit always tastes better. I loved the flavor the dressing gave the fruit.

Baked Ziti I

I wasn't sure about the sour cream, but it worked really well in this recipe. I halved the recipe which would be plenty to feed 4. The only other changes I made were mixing the ziti with the sauce and covering the dish in the oven to keep it from drying out. I'll be turning to this recipe often.

Carrot Cake III

I made this carrot cake for Easter. I only made half a cake because there was only two of us. Grating the carrots was a pain, but the final product was worth it. It took 6 small to medium carrots to get 1 1/2 cups worth, so for a full recipe it would take about 12.

Honey Glazed Ham

I made this ham for Easter dinner. It turned out delicious. I only made half the glaze and it was plenty for a 5 pound ham. Watch the ham very carefully while it's under the broiler. It will only take a minute or two. I can't wait for leftovers!

Grandma's Green Bean Casserole

I have a green bean casserole recipe that I love, but I wanted something easier for today. The only thing I changed was to saute the onions in the butter until tender before I added the flour and other ingredients. I liked the flavors, but the crackers weren't as good as the traditional fried onions.

Savory Deviled Eggs

I love deviled eggs, but I'd never made them myself. This was a good recipe, but I changed it slightly. Instead of using dill, I added a tsp of sweet relish. And a deviled egg isn't a deviled egg without a sprinkle of paprika on the top!

To Die For Blueberry Muffins

Very moist and delicous. I used brown sugar in my topping and didn't quite fill my muffin cups to the top. I ended up getting 11 muffins out of the batter. I'll be making another batch very soon.

Baked Salmon II

My husband complimented me on this salmon without me even having to ask. That's a good sign. The only change I made was to simply put the salmon in the oven straight out of the fridge. I just left it in the glass dish covered with aluminum foil.

Cajun Style Baked Sweet Potato

I love sweet potatoes, but I've always had them with a lot of cinnamon and sugar. I thought I'd try something different and I wasn't disappointed. These were delicious. Instead of just cutting the potatoes in half, I cut them into smaller pieces so they'd get more flavor from the spices. It's easy when you put all the ingredients in a ziploc bag and mix it up that way.

Penne Pasta with Spinach and Bacon

This is a good recipe for a weeknight meal since it's so easy to prepare. I used 8 oz pasta, extra bacon and added a generous amount of black pepper. I like cheese on everything, so I also sprinkled some Parm on top. Next time I'll try using rotel tomatoes for extra spice and drain some of the liquid off.

Coq Au Vin, My Way

I followed the recipe exactly and the flavors were great, but the chicken was overcooked. It wasn't tender at all. If it had been, this would have been a 5 star recipe. The flavor was wonderful.

Mini Ham And Cheese Rolls

Warm Crab Parmesan Dip

I made this as an appetizer for the Super Bowl. It didn't have a whole lot of flavor. I used about 16 oz of crab meat which proved to be too much, but that was my error. I only had about 1/3 cup mayo, so that was all I used. I tasted the dip before I put it in the oven and it was bland so I added some black pepper and red pepper. It still needed something more though.

I made this as an appetizer for the Super Bowl. They were easy to make. I covered each piece of bacon and each smokie in the brown sugar before I put them together. Next time I'll just sprinkle the sugar over the top because I don't think it made much of a difference and it was more time consuming.

Paprika Chicken with Sour Cream Gravy

Despite all the spices, the chicken wasn't very flavorful. I recommend using tablespoons of the spices instead of teaspoons. Next time I think I'll also add spices to the gravy. It's a very easy recipe, so it's worth playing around with.

Broiler S'mores

I remember making these around the campfire when I was a girl scout. They're so good. I used one big marshmallow per s'more and then put the whole thing back under the broiler to help melt the chocolate.

Buttermilk Pancakes II

YUMMY! My search for the perfect pancake recipe is over. These are light, fluffy and delicious. I scaled the recipe down from 12 to 4 and was able to make 8 pancakes using 1/4 cup of batter per pancake.
