Loaded Potato Soup -or- Tortillas
My favorite family cooking traditions
I was raised in the south, so my family has a long standing history of traditional southern dishes. While some of them aren't typically my favorite, we are prized on Homeade Macaroni & Cheese.
My cooking triumphs
My homeade lasanga is the best! Not for the calorie conscious... it is over flowing with italian sausage and dripping with three different kinds of cheeses. It is a true Italian dish... just be ready to hit the treadmill afterwards.
My cooking tragedies
Salty Pork Chops! I had just started using Meat Tenderizer and neglected to realize that it is to be used in the place of salt. Well, I seasoned my pork chops with the tenderizer AND salt, sat down to a beautiful dish of golden brown, fried pork chops... one bite, and my mouth burned from all of the salt. I don't think I ever used meat tenderizer, again.

Best Tuna Casserole
Yum Yum! Simple and delish recipe however, I did make a few moderations: Instead of 2 cans of cream of mushroom, I used only 1 and added 1/4 milk + 1/4 alfredo sauce. I also used French Fried Onions instead of chips and spinkled with a thin layer of grated parmesan & mozzarella instead of cheddar.

Six Can Chicken Tortilla Soup
One word = DELISH! For a heartier, thicker soup... you can also add one (1) 10oz. can of cream of chicken and 1/2 cup of prepared/cooked rice. Feel free to use any kind of rice you'd like (i.e. plain white rice, yellow rice or even chicken flavored Rice A Roni). The rice definitely adds great texture and makes the soup more filling! Sprinkled with some Mexican shredded cheese and garnished with a few blue corn tortilla chips... and you've got yourself one hearty Mexican inspired meal!

Chicken Soup II
Great soup! I had a cold and instead of downing a can of condensed chicken noodle soup, I thought I'd make some from scratch. I love spinach, so this was right up my alley and the tortellini was a nice twist as well! I made a few variations---limited the onions and celery just because I'm not a huge fan. I did use fresh spinach instead of frozen and it worked just fine. Instead of meat, I used a three cheese tortellini and omitted the egg noodles (too much pasta). Finally, I didn't go through the trouble of taking the chicken off the bone (thought it made the soup more "hearty" and it falls right off anyway) and I also added a couple teaspoons of butter. All in all---this was a fantastic recipe! I served it with garlic bread and it tasted event better for lunch the next day!!!
