Roasted Pumpkin Seeds

These are really very good. I carved my pumpkin, sorted the seeds, rinsed them and dried them for about an hour (I am in a dry climate). Used more salt + garlic salt and flipped over halfway through cooking. Straight out of the oven these were delicious. :) Thanks for sharing!

Chuck's Favorite Mac and Cheese

This is one of my favorite recipes of all time. The only modification that I make is to add a bit more sour cream, use very high quality white cheddar cheese and parm, and bake it a bit shorter since I am in a dry climate at high altitude. This recipe is a favorite of every person I make it for.

Raspberry Trifle

This is incredibly good as is. I have done minor things to change this a few times I have made it and it was really good...such as different berries, orange marmalade on the pound cake, etc. Delicious!

Authentic, No Shortcuts, Louisiana Red Beans and Rice

Very bland...too much water, and I reduced it to 8 cups. It was not the red beans and rice that I was looking for. Had to add a LOT of chili and pepper seasonings.

Pasta Salad with Shrimp and Basil

This recipe is really great if you use a good quality sea salt, fresh dill, and avocado. As is was somewhat bland, but with a few minor tweaks it was awesome. I have also made this substituting the shrimp for salmon with good results.
