Berry Oatmeal Muffins
Wish I had read past the first page of reviews bec I agree with many that rated it 3*s - this was just ok. I substituted apple sauce for oil as many suggested and used strawberries in lieu of walnuts bec of nut allergies in my household. The wheat germ gave it a nice texture, but they were pretty bland overall, especially if you didn't come across a bite of fruit or 'streusel'. With all the many excellent healthy muffin recipes on this site, I won't be making this again.

Morning Glory Muffins I
The perfect muffin - moist, delicious and nutritious and so easy to make! Taking the advice of the other reviewers, I used 1/2 c apple sauce in lieu of apple butter and omitted the walnuts bec of allergies. I had wheat germ but totally forgot to put it on, and they turned out just fine w/out it. I'm going to use just 1c sugar next time as it was a smidgen too sweet for my taste. Otherwise, this one is a definite keeper!

Orange Streusel Muffins
We were out of everything but essentials and pantry items and I was looking for a baked good this morning and decided to give this a go. They were great - super easy and as I said, can be made with what's available on hand. Next time I will 'well' the marmalade bec some of it spilled out making them looking rather messy. I added a bit of orange juice and zest for added flavor. Also, for my 2nd daughter's dairy allergy, I substituted rice milk for milk and omitted the butter from her struesel. I also used white wheat flour instead of regular. Finally, made a couple with plum preserves for my older daughter who's not fond of marmalade. Any preserve would go well with this recipe but I agree w/ the other reviewer that if you like your muffins sweet, serve some jelly on the side as these are not very sweet at all.
