Savory Green Beans
This ridiculously simple recipe is amazingly delicious!! The pancetta and shallots make the dish so fragrant. We've also used it with asparagus with the same excellent results!

Roquefort Pear Salad
Delicious!!! My husband proclaimed this to be his favorite salad to date! We used Danish Bleu cheese instead of Roquefort, and only used a 1/4 cup of olive oil to keep it a bit lighter and it came out divine. A definite keeper!

Unbelievable Chicken
The flavor was truly unbelievably good, but for some reason the chicken was pretty dry. I'm not sure if it was just that the breast we used were thin, or if the overnight marinade did something. I think I might try with boneless thighs next time to see if a less lean cut will keep it juicier.
