Andrew's Herb Risotto
Very nice! I didn't have fennel, so I used two bell peppers and probably more cheese. Really tasty as a side dish, and it will be lunch tomorrow as well!

Texas Caviar with Avocado
Excellent variation on Texas Caviar. I didn't have Italian dressing, so I omitted that and instead added the juice of one lime, salt and pepper, a couple tablespoons of cilantro and some garlic. Next time, I'm going to try some orange juice instead of lime, because that always brightens up avocado. As with salsas, it's best to let this rest for 15-20 minutes before serving to let the flavors meld a little bit.

Lemon Pecan Pound Cake
Like others, I eliminated the pecans and baked in a loaf pan. If you bake in a loaf pan, bump up the temp to 350 and cook for an hour. I wanted a more lemony flavor, so I added a teaspoon of lemon extract, and I also added some cornstarch to the flour to make it cake flour. This is definitely a drier pound cake ... about the texture of a scone. But that's perfect for serving with strawberries and whipped cream, or some other fruit that's been macerated.
