Brown Sugar and Port Cranberry Sauce

This is a delicious sauce. The orange and port really bring out the fruitiness of the cranberry flavor, and the amount of sugar is just right for a tart/sweet balance. I've tried it with both brown and white sugar -- with white sugar it is a little lighter, and you want about a tablespoon less of port (half a cup instead of 9 tablespoons). It's tasty both ways, but a brighter color if you use white sugar and ruby port.

Ally's Chocolate Chip Cookies

My kids really liked these. We used butter, and we soaked the oats for a long time (because we poured the milk on the oats and then found we had no flour in the house, so had to wait a day to finish them). They weren't at all runny, and they were big hit with the teen crowd.

Hearty Ham Casserole

This was really good. I used green onion (3 of them, sliced) because that's what I had on hand. I used more black pepper, about 1/4 tsp., and I put about 3/4 cup of cheddar in the sauce. Be careful not to overcook the potatoes or they will get too mushy.

Cincinnati Chili I

This is very close to Skyline Chili (what I think of when I think of Cincinnati), except that Skyline chili doesn't have onions in it. Diced raw onion, beans, shredded cheddar are the traditional accompaniments, when the basic chili is served over hot spaghetti. You can use cocoa (3T) instead of the unsweetened chocolate in this recipe, you don't need the oil if you are serving the onions raw on top. My family prefers it with the chili powder halved, no cayenne, and all the other spices bumped up a bit -- including 1/4 t of ground cardamom.

Linguine with Mushrooms & Ham

My family really enjoyed this. An interesting variation is to add a cup of green peas; I also have added a quarter-cup of grated dry cheese (parmesan, romano, dry jack) to the sauce or on top. I recommend 1T butter and 1T olive oil for sauteeing the onion, garlic and shrooms.
