Honey-Orange Marinated Salmon
This was pretty good. I followed other suggestions by adding minced garlic and reduced some of the marinade for the sauce. I also glazed the salmon half way through. Served with cauliflower mash and garlic asparagus. Yummy!

Black Beans and Pork Chops
Since I didn't have pork chops, I made this with chicken. It came out too soupy for me and, maybe because I used a mild salsa, I tasted mostly black beans. I also very lightly seasoned the chicken with pepper, garlic powder, garlic salt, chili and cumin. Nonetheless, this was okay. Next time I will drain some of the liquid from the black beans and use pork chops.

Black Bean Vegetable Soup
Absolutely delicious! I wanted a really thick soup so I used just one can of chicken broth and added one can pinto beans, zucchini and celery. I used low sodium broth and no salt stewed tomatoes and increased the amount of chili and cumin so I didn't have to add salt.
