To Die For Blueberry Muffins
I made this with my usual substitutions replacing white flour with whole wheat flour, sugar with Splenda and oil with applesauce. I used a large muffin pan which made 4 muffins, topped with Chef Joy's streusel recipe and baked for 20 minutes. It turned out pretty good. I made another batch using the exact recipe but dividing the batter to make five large muffins. The first batch of 4 muffins was filled with blueberries, the second batch not so much. So if you make these in regular size muffin pans, you'll want to add more than one cup of blueberries. I preferred the muffins with my substitutions and will add vanilla and little more Splenda the next time I make this.

Curried Chicken Tea Sandwiches

Easy Pasta Casserole
My family loved this recipe. I cooked a 14 oz. box of whole grain rotini but didn't use all of it because it was too pasta much for the sauce. I also added garlic and onions. I thought it needed more seasoning so next time I'll add some basil and oregano or italian seasoning.
