Frosted Cranberries

I thought they were a little tart but people loved them at our Family Thanksgiving yesterday. They are beautiful and very festive. I used corn syrup because I didn't have any pasturized egg whites. Next time I'll try to find the egg whites. Also, this would be delicious combined with some candied orange peels mixed in. Love it - thank you for the recipe.

Spinach Brownies

Yummy! Mine didn't set up very well right out of the oven but was nice and firm when reheated the next day. I used fresh spinach. DELICIOUS!

These are awesome!!! I also cut the recipe in half and added craisins. YUMMY!!! Mine were very flat but were still great! Next time I'll try another reviewer suggestion to make them a little fluffier.

Sopapilla Cheesecake Pie

I have to admit that I didn't think this would be very good based on the ingredients but I was assigned dessert on a Mexican dinner party so I gave it a shot. Wow is it good! As a HUGE chocolate fan, I'm surprised to say that this is my new "go-to" dessert. Wonderful & easy. I couldn't find the mexican vanilla but I just used really good quality pure vanilla extract and it turned out great. Didn't modify the recipe a bit! ***REVISION*** I cooked it for 45 minutes.

Cabbage Rolls II

Great week night meal. It makes a lot too! Great way to stretch the buck! We had this for dinner twice and still had enough left over to bring for lunch. I didn't use the lemon juice because I didn't have any. Other than that, followed it exactly and it was very good. I will double the sauce next time because the recipe as is definitely doesn't make enough.

Apple Squares

These are delicious! Great afternoon snack with tea or coffee and the kids love them! I used half whole wheat flour and half all purpose. I also used a little less butter than the recipe called for (because I ran out) so I substituted a little canola oil. Turned out perfect. I didn't use the topping in this recipe because I had some left over from the "to die for blueberry muffins" recipe from this site. I saved it in the freezer for a recipe just like this.

Creamy Twice-Baked Potatoes

We loved these. I also added shredded cheddar cheese but you could probably add anything you like on your baked potatoe. More work but worth the effort.

Excellent. Next time I'll make more. I used regular sized shrimp and chopped them up. I also didn't have cream so I used skim milk and a few tablespoons of cream cheese. I added garlic too. Great!

Italian Spaghetti Sauce with Meatballs

This was awesome! I only had a can of diced tomatoes and a can of stewed tomatoes (both only 16oz.) but it still tasted great! I threw in a few grape tomatoes just because I was so short on the canned ones. I also used crushed saltines instead of bread crumbs for the meatballs. Wonderful - will make again and again.

Curry-Coconut Shrimp

This was excellent! I used whole coconut milk, green peppers, and no cilantro (didn't have any). Also served over wholewheat thin spaghetti. YUMMY!
