Garlic Chicken
The recipe as written was not exceptional, but I had to give credit to Carol for the idea itself. With a little tweaking, I came up with a new family favorite. I increased the olive oil to about 3/4 c. and the garlic to about 6-8 cloves minced and added a shake or two of hot pepper flakes to the mixture/marinade before heating it. I also pounded the chicken a bit and allowed it to marinate in the olive oil mixture for about 2 hours before breading it. I then used 2 cups FRESH bread crumbs (which my husband thinks makes all the difference in the world) and a little black pepper with the freshly grated Parmesan cheese and presto! A hit for adults and kids alike! Works very nicely with tenderloins too.
