This cake took a little bit of work, but it was well worth it. I made two changes with this recipe. I used already made pudding instead of the instant vanilla pudding mix. The mix in the box clumped on me while cooking. I also didnt add as many tootsie rollls. Just a few pieces on the top of the cake. It was sooo funny to see the reactions of people when they saw this cake. They thought it was real.

This is the best Carrot Cake recipe. I made this for someones birthday at work, and almost everyone had two pieces. I made a few changes. I used cake flour instead of all purpose flour. I added one more cup of carrots, and I didn't add the coconut. The recipe does not tell you to add in the allspice, but I added in with the dry ingredients. Other than the few changes mentioned above,I suggest you follow the receipe as instructed.

This is a excellent recipe. Very good taste. Someone suggested broiling the peaches for easier peeling. I don't suggest that you do that. Its takes away the taste from the peaches. I would suggest just using a peeler.
