Great recipe! Sometimes I will make just the filling and use it on top of ice cream or traditional pancakes.

I really liked these pancakes. So did my kids. They were easy to make. I too, halved the recipe. I wouldn't call the results mushy. They were more crepe-like pancakes. I actually liked them better than a traditional pancake. I also added the vanilla extract. This is definitely a recipe I will use often. It is just too easy!
