Broccoli Chicken Casserole I

This is a great "base" recipe to add your own modifications, but that's the joy of cooking. You don't always have to follow a recipe to the tee. I did end up following the advice of others & adding a can of cream of chicken soup and replacing the mayo with 1/2 a can of milk. I also added 1/2 uncooked rice and just sprinkled the dry stuffing mix on top. Baked at 325 for 1 hr 15 min (to allow for the rice to cook).

Three Ingredient Peanut Butter Cookies

Step 2 1/2: Press down with a fork in a criss-cross pattern. I did add 1/2 tsp of vanilla and baked 14 minutes. They weren't baked after 6-8 minutes.

Cold Tuna Macaroni Salad

This was weird. Not the cold macaroni tuna salad I expected. The tomatoes definitely watered down the salad. It says it serves 6, but it's more like 16, and I didn't even use all the noodles!

Baked Apple-Pecan Maple Pancakes

This was a great way to use up that box of pancake mix that's been in my pantry forever. If you are worried about the batter being dry, I shredded 1 medium apple into the batter and it made it so moist and delicious. I also used cinnamon sugar rather than plain cinnamon. I didn't have nuts, but tasted great anyways!

Gobble Up Granola Snacks

Great recipe! Followed others' advice and used honey in replace of corn syrup. I also added an extra spoonful of peanut butter and they didn't crumble at all.

Jalapeno Pepper Appetizers

Amber's Sesame Chicken

This was really tasty with steamed snow peas (in the pod) in replace of the green pepper (use two packages from the frozen section at the store). I didn't double the sauce per other reviews, but added a little more honey. I also added some garlic salt to the flour mixture. The chicken would have been too bland without it. I will definitely make this again.

Crescent-Wrapped Brie

Great recipe. If you're cooking for one or two, just use a small brie wedge and two crescent triangles. Serve with sliced apples and wine!

Seven Layer Dip I

The dip is a little "dry" for lack of a better word. Needed more than 8 oz sour cream, half the amount of cheese (eliminate bottom layer), and perhaps more salsa. Also the chopped black olives don't look as nice as the sliced.

Hot Corn Dip

Thai Pineapple Chicken Curry

Quite spicy if you follow the exact recipe. Definitely cut the curry paste in half. Other than that, everything is perfect! **If you're like me and cook for one or two, just change the serving size to three. I think it still ended up being 5 servings!

Banana Rum Cake

I followed the directions to a tee, and even came up slightly short on the 1 cup mashed bananas, and it turned out very nice and moist. However, the rum taste is different than that of a island rum cake. If I make it again, I will make sure not to skimp on the cheap dark rum and splurge for the good stuff! I think the cheap stuff made it taste funny.
