Rita's Sweet Holiday Baked Ham
I used a 3 1/2 lb. spiral ham, so scaled the recipe down to 6 servings, and put it in the oven for 45 minutes. THE best ham I've ever had. After the meal, I put the leftover ham in a baking dish, then poured the liquid from the bag over the ham, and stored it in the fridge overnight. The second night's meal was even better...the meat picked up more of the sweetness of the sauce. Will definitely use this recipe again!

Baked Sweet Potatoes with Raisins and Pecans
The best recipe I've found for sweet potatoes! Made it exactly as stated, and wouldn't change a thing. Big hit in our house.

Hard to believe this is low-fat! Wonderful! Instead of cooking garlic & onion separately, I simply mixed two to three teaspoons of garlic-infused olive oil into the chicken broth. Didn't want to use up all the milk in the fridge, so used low-fat evaporated milk (1 cup low-fat evaporated milk plus 1 cup water). Will definitely make this again & again!
