Onion Salmon
This is a great way to make salmon, but I modify the recipe a bit. It comes out very moist. I add lemon slices and some fresh rosemary. I also brush a little olive oil on the skin side and on top, before I add anything. I seal the foil, and it comes out juicier. You can cook in the oven as well, but cook at 400 degrees for about 20-25 minutes, and seal the foil.

Chicken Marsala
This was pretty good- but I am still looking for a recipe that has a thicker sauce, like the one I had at "The Spaghetti Factory" Restaurant. Watch out if you use more Marsala than the recipe calls for... I accidently put in too much, and it was too overpowering. A little too much butter/oil in the recipe.

Baked Mushroom Thighs
I love the basic recipe, but changed it a bit and it was fantastic. I used boneless, skinless thighs. Instead of bread crumbs I used crushed up corn bread stuffing (Stove Top). I needed to add a little more milk and butter than the recipe calls for, and skipped the corn starch. It was very filling. No extra carbs needed with this meal!!!!
