Country Quiche
I love this, making it often. I make it exactly as directed using a frozen (NOT deep dish) pie crust and it fits perfectly. I like how it is dense and not runny. It does only take about 30 minutes though. I have used the same recipe to make crustless mini-quiches in a muffin tin. These heat up great for breakfast in about 30 seconds.

Italian Salad Croutons
Who knew homemade croutons were so easy and delicious? I used sourdough bread that was getting stale and cut the pieces fairly large, just tossed in a bowl with Italian seasoning and EVOO to coat (I just eyeballed it) then baked at 350 and flipped them over about halfway through. Crunchy outside, slightly soft inside, very good!

Grilled Bacon Jalapeno Wraps
These were very good, quite spicy, maybe I didn't get enough of the membranes out, but my husband loved it! I did use whipped cream cheese just because it was easier to scoop into the peppers. And I used center cut bacon, so a little less fat. Will be making again soon, but next time I'll be wearing gloves to work with the peppers, my hands were on fire for several hours!!
