About this Cook
hi, my name is emiko and i live in northeast pa. i'm married w/2 kids and 3 step kids. i work full time and my main hobbies are cooking, scrapbooking and reading. i also prepare meals for my father that he can freeze and heat up in the microwave, combining my love for my family and love of cooking. and obviously, one of my favorite tv shows is "buffy the vampire slayer", hence my user name and pic. i have gotten most of my immediate family completely hooked on that show. we pretty much relate to life accoring to a particular episode, lol.
My favorite things to cook
i'm definately known for my baking, "the cookie lady". i'm "required" to bake about 10 dozen chocolate chip cookies for our monthly managers meeting at work. otherwise, there are 12 very unhappy men and women. at christmas time, i make about a dozen different kinds of christmas cookies. i love trying new things for dinner as well. my favorites are italian and mexican/latin dishes. my family usually make good guinea pigs and are completely honest. i also try to find out to make something that you can get in a box homemade. i figure, in this economy, if you can make home made w/ingredients you have on hand, the more you can use on other things. also, homemade is so much tastier, and you KNOW what's in it.
My favorite family cooking traditions
when my gram was still around, we used make potato pancakes at her house a couple of times during the summer. it was always gram, my mom, myself and my two cousins. later on our kids were in the mix. gram made the best potato pancakes ever. whenever we make them, i always think of her.

chocolate chip cookies!!! i use "the best chocolate chip cookie" recipe from this site, 5 stars.
My cooking tragedies
the first time i made homemade gravy. what a disaster! lumpy, pasty, no flavor what so ever. luckily, i've lived and learned from my mistakes.

Best Hot Crab Dip
this is a really yummy dip. i've made it several times for family functions and even the crab haters eat it. i do chop up the capers since they can be overpowering. makes quite a bit and i always have sevral people surrounding the dish dipping into it. tasty and easy. thanks for the recipe.

Creamed Chipped Beef On Toast
simple, economical and tasty. honestly, my dad used to force this stuff on me when i was a kid. for some odd reason, i had a major craving for good old creamed chipped beef on toast one day and this looked easy enough. the only i adjusted was to use lots of black pepper. the whole family loved it, including my 7 and 8 year old sons! they actually request that i make this. and i tell you, on a cold winter's day, very comforting. not to mention, budget friendly. my store doesn't carry jarred dried beef, but buddig's sliced beef works just as well (and is probably less salty). thanks so much.

Mouse's Macaroni and Cheese
this is pretty much the only mac and cheese i make. the only change i have made is to use 1 tsp of seasoned salt in lieu of the pepper and mustard powder. sometimes i used crushed buttery crakers mix instead of bread crumbs and mix in a little shredded cheddar for a nice crunchy top. i love creamy baked mac and cheese and this is creamy and cheesy. it also works well for stove top mac and cheese, just double the macaroni, cook it until it's just tender and add to the cheese sauce. also, it reheats very well. my 7 year old won't touch mac and cheese, unless it's this stuff. i just have to tell him it's "mommy's mac and cheese". i get many requests from my family to make this. i've made it so many times, the recipe is memorized. better than the box, by far. YUM-YUM!
