African Peanut Soup

This is my new favorite soup recipe! Seen the ingredients, I wasn't too sure I would like it but I changed my mind as soon as I tasted it. Make sure to throw in some cilantro for added oomph!

Tofu and Veggies in Peanut Sauce

Yummy and quick, perfect for a week night! The sauce seemed to lack a little zing so I used more soy sauce and vinegar. Prior pan-frying the tofu is a must!

Greek Style Potatoes

A delicious and different way to have potatoes! As someone else suggested, I uncovered the dish and drained most of the liquid during the last 1/2 hour so that potatoes would be browned a little. next time, I won't probably cover at all and use less liquid.

Ash-e-jow (Iranian/Persian Barley Soup)

I don't know much about Persian cuisine but this soup was very good! Sour, creamy, hearty... I'm glad I made a huge pot for myself because I keep getting back for leftovers! Will make again very soon.

Broccoli Pie

Even my boyfriend, who's not a broccoli fan, enjoyed this dish. I used fresh broccoli and sauteed it first with the onion. I used skim milk and only one cup of cheddar to make the dish healthier.

Carrot Burgers

These burgers are amazing! Great taste and texture, just as good warm or cold. I shredded the carrots as per other reviews and they hold together perfectly. I also used cilantro instead of celery. Next time, I'll try to use something healthier than corn flakes, though.

Gobi Aloo (Indian Style Cauliflower with Potatoes)

Artichoke Mashed Potatoes

Vegetables mashed together with potatoes is a typical dish in Belgium ("stoemp" or "rata"). I had never thought of trying with artichokes, though. The association is not bad but not something I would make again. I still prefer mashed potatoes with carrots or cabbage.

Jamie's Minestrone

At first, I thought it was going to be bland but the flavors developed at the end of the cooking process. I still added some extra garlic and cayenne pepper. This is a very good minestrone recipe, although it seems to be missing a real Italian flair. Maybe it was because I didn't have fresh oregano and used dry? I will use this recipe again anyway! Oh and and the other reviewers are right, this made a ton of soup, even if I skipped celery and only used 3 carrots and two zucchinis... ETA: When reheated, this soup is totally worth 5 stars! My colleague raved about the wondeful smell. Even my cat, who usually despises human food, wanted to try some... If that doesn't say something!
