Rockin' Rhubarb Pie
I made this pie over the weekend and thought it was very good. I used light cream instead of half and half beacuse that is what I had on hand. I would make this again, however, I might try it as a one crust pie instead of two, it seemed like too much crust masking this lovely custardy filling.

Eggs Benedict
I wanted to share a time saving hint that I saw on a cooking show. You can poach your eggs in advance then remove them from the boiling water and place them in a large bowl of ice water, make sure you have plenty of ice in your bowl of water. You can let the eggs stay in the water while you prepare your other ingredients. When you are ready to assemble your eggs benedict simply remove the egg from the ice water and put it back into your boiling water for just a few seconds until it gets warm enough to serve. You will be able to have a number of eggs ready on a moments notice using this method.

Orzo with Mushrooms and Walnuts
I made this recipe last night I cut the recipe in half and used baby bella mushrooms along with yellow onion. After 15 minutes cooking time there was still a lot of fluid in the pot so I removed the cover and continued to cook for about 8 more minutes and then served. My husband and I found it to be mushy even with the nuts and rather bland. I have not cooked orzo before and this may be the correct consistency for this pasta dish, however I would not make this one again.
