we've been eating this forever and it's a staple--so easy and fast and all the ingredients are always on hand! we usually cut the chicken into small pieces, coat in taco seasoning, put in a casserole, throw on some salsa, cook 10-15 minutes, then add mexican cheese (just a grocery store mix) and crushed tortilla chips and throw back in the oven to melt the cheese. serve with broccoli and refried beans, and it's superb.
