Red and Green Christmas Jalapeno Jelly

This is so easy and delish. Make sure you use a large pot or you have a good chance of a huge mess and a fire hazard. I strain out the peppers, just like mine smooth. I do wish I could get it a little spicier, must be my peppers.

Salt and Garlic Bagel Chips

Okay, my greased cookie sheet started smoking, burnt a couple of the bagel slices, after 10 minutes. Did a double layer of cookie sheets...maybe too close to the bottom? not sure because both cookie sheets were smoking.

Basil Pesto Bread Rounds

Don't bother toasting first if you skip to spreading your bread rounds and broiling them for 3 minutes, check carefully. Turn off the broiler. If they are bubbling, then, turn off the broiler and adjust the cookie sheet to the lower rack. Leave in oven for no longer than 3-5 minutes. You will have the same results as pre-toasting the rounds.

Easy Batter Fruit Cobbler

Sooo good! Used homegrown peaches from a neighbor and served with vanilla ice cream one day, whipped cream another time...then, it was all gone. The peaches were very small and so were the pieces, but it seemed to distribute into every bite. Very good.

Italian-Style Round Steak

Very delish! I used beef consomme and enough water to cover the meat. The minced garlic infused into the broth and gave off a wonderful aroma. Make sure to use the beef stock in the sauce, it really adds a meaty flavor in the finished sauce. So good.

Artichoke and Herb Tarts

Ok, this tasted great, but my puff pastry was not baked on the bottom. I used Trader Joe's brand.Put back into the oven, covered with aluminum. Looks like it is baking a bit, but, not sure if I an serve it to my guests.

Ham and Swiss Casserole

This came out great. I used Cream of Mushroom and about 6oz of steamed freash mushroom, quartered, and 1 cup of frozen peas. I decided to add the mushrooms because I did not have any other condensed cream soups except for mushroom. I love peas in casseroles, so I added those. I mixed, then tossed everything together and baked covered for 35 minutes, uncovered, sprinkled another 1/2 cup of swiss and baked for another 5 minutes, It was very yummy! I left out the onions and bellpeppers because my son does not care for them.

Hollandaise Sauce

I should have paid more attention to the comments about cutting back on the lemon juice. I used unsalted butter, but I think that was a mistake. Needed to add more salt and it just didn't flavor it correctly. As written, it was WAY too lemony. It had a nice texture...going to try it again.

Home-Style Scalloped Potatoes

This was excellent. It sat for a while while I prepared the Foolproof Rib Roast also on Allrecipes, and it set up very nicely. I added just a sprinkle of parmesan cheese to each layer for some flavor, not wanting the oozy cheese type this time around. Used N/F milk, was also great the next day with ham and eggs for breakfast.

Hot Spinach Dip

This was so easy and so delish! My hubby does not like artichokes, so this works well, and less expensive. I add 1/8 to 1/4 tsp garlic powder. I also added 4 oz. of feta this last time I made it, but x-act was X-LENT. X-LENT recipe!

Pineapple Upside-Down Cake VII

This was so easy and I couldn't believe how delish it was! I used 1 cup of the pineapple juice, replacing some of the water called for on the box recipe. I also used yellow cake mix. Melted the unsalted butter in a 9x13 glass dish, sprinkled the brown sugar, and proceeded as directed. This was really good!

The waiting was the hardest part. Also took a while to strain, I didn't do a great job of it, but I'm sure it would produce a nicer end product taking the time and effort to do it. Great recipe!

Country Banana Bread

I used spice cake mix and 1 cup of oil. It baked 15 minutes longer that stated and tested "done", but the very bottom lining of the cake was underbaked when I cut into it. It has a great taste...trying to salvage it put it back into the oven @ 325 for 20 minutes, cross your fingers for me. I may try a jellyroll pan as suggested because this was a real time saver! Also will cut back on the oil to maybe 1/2 a cup or 1/3 cup as stated on the recipe.
