Brown Rice Bake
Very good and economical. I added a can of diced tomatoes with green chilies and some garlic powder. It was like a casserole.

Scrambled Eggs with Leek and Sauce
I liked it. It was cheap, filling and flavorful. It wouldn't be a stretch to add other veggies like sauteed spinach and mushrooms to it. I will definitely make this again.

Mom's Ginger Snaps
I doubled the spices, as most reviewers did, and added a teaspoon of fresh grated ginger. Everyone loved them.
