Egg Fried Rice
Very tasty. I used brown rice and cooked it in low sodium chicken broth and soy sauce. I let it cool in the fridge for a few hours and then sauteed onion, garlic, peas, green pepper and spam (all finely diced) and added two eggs to that. The original recipe was a great jumping off point.

Minty Orzo Lentil and Feta Salad
Really tasty. I used french lentils (what I had on hand) and I used a mild feta cheese as opposed to a stronger feta. The milder feta cheese doesn't overpower the rest of the ingredients. I added lemon juice as others had suggested which brightened the flavor some. I think I used too much dill because it came out more dilly than minty. I guess I will adjust the amounts next time, even though I love dill, the mint didn't seem to come through. I will definitely make this again!

Slow Cooker Chicken Taco Soup
If I ever make this again, which is highly doubtful, I will omit the beer. And even if I did omit the beer, the recipe is just not doing it for me.
