Garlic Scape Pesto

I agree that it has a different texture than basil pesto. It was good on pasta and I also mixed a little into some chicken salad. It kept covered in the fridge for several days.

Roasted Brussels Sprouts

I got brussels sprouts in my CSA box. I hate brussels sprouts, but didn't want to waste them. I took the advice of other reviewers and cut them in half before roasting. I was shocked - they were pretty good. I think next time I would roast them a little longer, since mine didn't get really brown. I would recommend this to any brussels sprouts-haters.

Restaurant-Style Coleslaw I

I got a cabbage in my CSA box and didn't know what to do with it, so I made this - I just chopped the cabbage and grated some carrots instead of using a pre-made salad mix. I used sour cream instead of the milk and buttermilk. Also, I used red wine vinegar instead of white wine because that's what I had. Pretty good with cold roasted chicken.

Grilled Eggplant, Tomato and Goat Cheese

I took another reviewer's advice and soaked the eggplant slices in olive oil, lemon juice, and minced garlic before assembing. A tasty addition to lunch and a good way to use my first CSA eggplant and tomatoes.

Zucchini Pineapple Bread II

I did not drain the pineapple and decreased the oil to 1/2 c. I was concerned that there weren't any spices in the bread, so I added 1/2 tsp cardamom. This was delicious for breakfast - moist, but not soggy.

Lemon Chicken Salad

Really fresh tasting for a spring lunch. I did make a few changes, though. It sounded like a lot of onion and my young son doesn't like it raw, so I omitted it. I used regular frozen green peas instead of snow peas. I also left out the lettuce and just served it with lettuce leaves on sandwiches.

Tartar Sauce IV

This is very easy to scale down. I used tangy dill pickle relish so I didn't have to chop pickles. I left out the onion and added a couple of twists of freshly ground pepper. Easy to make and tastes better than anything I've ever bought.

Easy Italian Stuffed Shells and Meatballs

Everyone really liked this. I couldn't find stuffed shells, so I bought ricotta-asparagus cannelloni. I also used fresh mushrooms (way more than the tin suggested). I think this has a lot of potential to be customized by adding chopped bell peppers, different cheeses, or even turkey meatballs depending on what you feel like.

Seven Layer Tortilla Pie

This smelled really good while it was cooking, but it didn't present well on the plates (probably due to the fact that the tortillas got rather soggy). My 3-year-old just looked at it and kept asking what it was. After my husband and I stopped laughing, we all went out for dinner.

Peanut Butter Banana Melties

Threw these on the BBQ when the burgers were done. Really nice end to a BBQ dinner. I used chunky peanut butter for mine and my son's, and smooth for my husband's (personal preferences). Make sure you add enough chocolate chips!
