Mango, Peach and Pineapple Salsa

Wow! Awesome recipe. I didnt have yellow peppers so I left them out. The fruit I was using was perfectly ripe, so I didnt use the sugar either, but otherwise I did the recipe exactly as is and it rocks!!!

Chef Scott's Pico de Gallo

I played with all of the volumes on each ingredient. I think this is a fantastic recipe, you just need to play with the ingredients to get the flavour you like best. I did notice that its much better after resting for an hour in the fridge, but after 3 hours, it starts to get a little soggy. Try putting in on the table 15 minutes before serving to let the tomatoes 'come back.'

Vegetarian Bean Curry

After reading most of the reviews, I can see that I probably should have mentioned that the lentils used in this recipe are the tiny orange lentils that cook very quickly. I get mine from the organic section of the market. Canned or soaked lentils will work too, so long as the liquid and cooking time is adjusted accordingly. Also, as a side note, I use whole cumin seeds which I toast and grind in a spice mill... but ground cumin works just as well.

Sean's Falafel and Cucumber Sauce

My boyfriend and I loved this recipe! I wasn't sure at first when I was putting it together but these have a very crisp, fresh taste even though they're fried. I used red chilli flakes instead of cayenne because I like the random bites of heat throughout and green onion instead of white. I also lightly breaded the patties before I fried them which gave a really crispy outer shell. The sauce goes perfectly with these and the leftovers make a great veggie dip. Thanks for the great recipe!

Baked Spinach Artichoke Dip

This recipe was not at all what I expected. I never use frozen spinach which should have been my first tip! This dip was not at all creamy and the taste of frozen spinach was overwhelming. I served it with fried pita chips and the chips were the only part we enjoyed! I guess my preference is for the creamy version and I will know for next time to use fresh spinach in my dips!
