Blueberry Cream Muffins
I'm not a big blueberry fan, but family members request these muffins when they come into season. Also good made with Splenda Baking Sugar.

Peach Pie
This was a great recipe and easier than most. We have to avoid sugar, so I used 1/4 cup Splenda Baking Sugar and 1/4 cup Splenda Brown Sugar. To cut the sweetness, I splashed the filling with lemon juice before putting the top crust on. Like one of the previous reviewers, I also added a heaping tablespoon of corn starch to the flour. It was my first non-runny peach pie! All in all, this got rave reviews from the extended family and I'm getting ready to make a 2nd pie for my husband, who wanted more! Thanks...

Artichoke Rice Salad
This is a variation of a favorite recipe. I tried this one to see if I liked the difference, but I discovered the other is easier and tastier. Use two boxes of chicken flavored rice a roni...no green peppers...no celery...and four jars of artichokes instead of three. I bump it up to 1 1/2 tsps curry instead. Put it in the fridge overnight to get it good and cold. Looking at it, people mistake it for potato salad, but I always get raves reviews, except from those who hate curry flavor. Give it a try. It's well worth it.
