Chicken Fried Chicken
I made this tonite because we were having our traditional Sunday dinner with some family over, and I wanted to try something different besides my egg wash and bread crumb chicken cutlets. I must say that these were delicious! I followed someone elses suggestion of dredging through flour first before egg wash and saltine coating, and I used olive oil instead of vegetable oil and I was very pleased with the results. My children love this as well! I will definetly be using this again.

Cheddar Beef Enchiladas
We absolutly loved this, as this was my first time making enchaladas! I did make some personal changes, just to suit our own tastes and based on others reviews. I made extra rice, used olives, and I simply forgot to add the salsa, and I did leave out the chicken soup. I used enchalada sauce instead. I must say, I even had a friend from California, who knows mexican dishes say it tasted perfect. I will definetly be making this again!

My Chili
I made this as my first time attempt of making chili, and it was a huge hit! I did add and extra can of kidney beans, and a little extra chilli powder, but other than that I followed the recipie as made, and it turned out fantastic. I serveed with biscuts and for the kids I put it over some macaroni. This will definetly be a keeper in our house!
