Lime Fish Tacos

Never had fish tacos before, so I'm not really sure how they are supposed to taste. I figured lime and fish would go well together so I tried this recipe. I used tilapia. I think it turned out well. Maybe a little too much lime for me, but everyone else seemed to like them. The sauce was a good touch and my wife really liked that.

Poached Salmon

This was the first time I'd ever poached anything. It turned out great, with a side of brown rice. My wife loved it and I don't think there will be any disagreements over me making it again.

Curried Coconut Chicken

I really liked this recipe. I smelled wonderful while cooking (and for a day later). For the most part, I think my family enjoyed it. I served it over jasmine rice (another first for us). I'll be making this again.

Everyone absolutely loved this recipe. I agree with the previous post about the sour cream separating though. I think next time, I'll just put spoonfuls of sour cream in each serving.

Debdoozie's Blue Ribbon Chili

Super easy. Super quick. I took some leftovers to work for lunch and shared with a co-worker. For the rest of the week, he kept talking about it. One evening, he called me at home asking me for the recipe. I pointed him here. He made it that night! When I made this recipe, I used a mild salsa so everyone in the family could eat it. I probably could have used a medium salsa. I also added chick peas. I'll probably do with them next time. Thanks.

Red Rice and Sausage

I don't know what Red Rice and Sausage is supposed to look/taste like, but this was pretty good. Some of the gang didn't care for it, but my son and I really liked it. Dashed a bit of hot sauce on it and it was even better. I will make this again. Thanks for the recipe.

Old Bay® Potato & Green Bean Salad

I prepared this recipe last night. My wife wanted to make sure there were going to be leftovers -- for breakfast!! Needless to say, she really liked it. I made a few modifications just because I had the stuff on hand and thought it might work well with the recipe. I cubed and stir-fried half of a boneless, skinless chicken breast and tossed it in the salad. I also added a teaspoon of minced garlic and 3 baby carrots finely chopped. I added about 1/4 cup of finely chopped fresh mushrooms. Served everything over a bed of baby spinach leaves (about 1/4 cup) in each bowl. I re-calculated the nutritional values after my modifications. The new calorie count was 163 calories, 3.5g fat, 27.9g carbs, and 5.9g protein. Very healthy and very good.

Burgundy Pork Tenderloin

OMG!! This was awesome!! The aroma through the house, as it cooked, was 'intoxicating'. I had originally cooked this for a Sunday lunch. There were leftovers and no one complained when I suggested serving them for dinner as well. It was the first meal that I had cooked in my brand new electric roasting pan. Since there are so many of us, I doubled the recipe (which means lots of gravy). Somebody, give me a straw!! We actually dreamt about this recipe that night. I will definitely be making this again soon!

Grilled Teriyaki Tuna

My wife and I are still eating this (as I type). It is wonderful. We never thought tuna could taste this good. I did make a minor change to the recipe, however. Not so much a change to the recipe as a change to the marinade. I put the marinade in a vacuum canister for my Food Saver. Sucked the air out and put it in the 'fridge for 30 minutes. Then I took the meat out (swapped the top and bottom pieces) and repeated the process. Oh, I also put a piece of soaked hickory on the grill for a smoky flavor. Well, gotta go and finish eating my dinner. Thanks for a great recipe idea!

Cedar Plank Salmon

I've made this recipe several times now... mostly at the request of my wife. When I say 'several times', I mean about twice a week for a month. This was my first cedar plank recipe and I was very pleased with the results. What an incredible flavor! Thank you.

Swedish Spareribs

I must admit, I was a bit skeptical about how this was going to turn out. It had a wonderful aroma as it cooked, but not one that I would have associated with spareribs. The 4-year came into the kitchen and thought I was making cookies. All-in-all, it is very easy to prepare and everyone absolutely loved them. I've made them twice already. One note: I think the recipe only calls for 2 pounds of meat. The mixture, however, can easily coat nearly 5 pounds of spareribs.

Carolina BBQ Pork Sauce

I don't know anything about Carolina BBQ, so I can't whether or not this is TRUE Carolina BBQ. What I can tell you, however, is that I thought there was, indeed, WAY TOO MUCH VINEGAR. I had to do a lot of 'doctoring up' to make the sauce palatable for the rest of my family (ketchup, tomato sauce, onion flakes, more sugar).

Best Egg Rolls

Very easy to make. Very good to eat. Everyone loved them. Somehow, though, I was able to make 20 egg rolls using the standard-size egg roll wrappers that I purchased.
