John's Pimento Cheese Spread

This was my frist attempt ever at making pimento cheese. I haven't actually had the stuff since I was a child, and it was always the stuff from the store. I have alot of jarred pimentos from my summer garden and decided to make this for a party. I doubled the recipe and made it exactly as written. I did not measure out the full one cup of mayo, I just added it a little at a time until it was how I wanted it. Like the first reviewer I used a hand mixer to help incorporate the cheese. I did use a block of extra sharp cheddar and shredded it myself, since I have read that the bagged shredded is no good for this kind of recipe. I did also add some of the juice from the peppers, just to add more flavor. Just a few splashes, maybe 3 or so tbsp of it. This was WONDERFUL! I love it! This will definitely be made again!

Habanero Pepper Jelly

This is wonderful! I was looking for a way to use up our Habeneros from our garden and I made a small test batch of this. I wish I would have made more! While the carrots scared my bf, they ended up being perfect. They added great color and needed texture. This is very sweet with a lot of warmth it in. It's perfect! Everyone that has tasted it, loves it. My bf has eaten it on crackers, on sandwiches and even added it to some chili I made. It's so good! Now we are eagerly waiting for the current harvest of habeneros to get ripe so I can make a large batch!

Lime Chicken Soft Tacos

These are REALLY good. I boiled my chicken first, then shredded and sauted with the remaining ingredients. I used a little chopped yellow onion because I forgot the green onion and substituted fresh cilantro for the oregeno. you MUST use cilantro in order to get the correct flavor. Topped with cheese, tomatoes, home made salsa, fresh jalepenos and sour cream! Wonderful!!

Zucchini Alfredo

Made this as written except I used about 5 cloves of garlic. Also added a lot of salt and after final tasting...added more. This needs a lot of salt. I had to add extra milk at the end to get it to become more saucy. As written it is very thick and would be good as a stuffing for chicken breasts.

Zucchini Corn Fritters

Oh my goodness! I wish I could give 100 stars! These are absolutely amazing! Based on other reviews I just used a can of sweet corn and I halved the recipe and still had a ton of these things. They were wonderful by themselves and dipped in Ranch dressing. My 5yr old daughter loved them and my boyfriend finally begged me to take them away before he ate them all!! Haha I have a garden which is producing a ton of zucchini so I have a feeling I will be making these alot! I think next time I make them I will be doubling the amount of zucchini just to get more of the veggie into each fritter! Thank you SO much for this incredible recipe!

Dill Pickles

So far I have canned about 20 cans of pickles using this recipe! We only let them sit about 2 weeks before my b/f HAD to taste one and my goodness they were delicious after the 2 weeks! So crisp and tastey! LOVED them. I couldn't find dill heads so just used the dill sprigs and its wonderful! Sometimes after I let the brine come to a boil, I turn it back down until I get my jars packed, then turn it up and come back to a boil and fill the jars. If you let it continue to boil, you will boil away too much liquid and end up with salty pickles.

Made these exactly as stated, but did not use the icing. This was very very good. Great flavor! My entire family loved it. This is going to be a great way to use extra zucchini's from the garden.

Easy BBQ Flank Steak with Chipotle Mayo

This was awesome! i let it marinade for 48 hours and then threw it on a hot grill. The steak had wonderful flavor. As far as the mayo, I think most people would have better luck if they made it to their own preference. I just took a few spoonfuls of mayo (enough for me, my bf and daughter) and then added about 2 chipotles and some sauce and tasted, and then added until I had the flavor I liked. My bf LOVED the mayo. If you just take enough mayo to serve the number of people eating and then add a little of the peppers and sauce at a time, you will be a lot happier. Too much chipotle can be really hot. I cannot wait to make this again.

Lemon Pasta Sauce

Finally made this after having it saved for months. This was so simple to make and was yummy. I followed the recipe exactly except I added several chopped cloves of garlic and used 1/2 of the cream and 1/2 skim milk. I did let it simmer and reduce but it doesn't get thick, that is the only draw back (of course it may be bc i used skim milk with the cream. The zest is really important as it adds a POP of citrus flavor. Added shrimp and served over linguine!

Spicy Turkey Burgers

Very simple to make and very very good! Only difference I made was I used ground Ginger instead of fresh because it was all I had on hand. Like others suggested, I also topped ours with pepper jack cheese. Another good topper is some good home made chow chow if you have it. Thanks for the recipe!

Sam's Famous Carrot Cake

My bf requested a carrot cake for his bday this weekend and so I attempted my first ever made from scratch cake. I wanted a recipe like my grandmother used (with the nuts and raisins and other stuff) and not only did I manage to make this cake and not mess it up, but it was INCREDIBLE. SO moist and flavorful. I got a ton of complements on this cake. I followed the recipe exactly except I used two 9in round cake pans which worked out perfectly. I topped it with a simple home made cream cheese icing and chopped pecans!

Asparagus Avocado Medley

Made this for dinner last night, followed exactly except used a few less mushrooms and 1 additional avacado. This was very tastey. Very light and refreshing. Went very well with grilled chicken. Can't wait to see how it tastes today. Next time I may make a little more of the dressing.

Unbelievable Chicken

I made this recipe exactly as stated and let it marinade over night. I threw this on the grill and was really surprised by how tastey this was. I never really like plain grilled chicken but this actually had a nice flavor! My bf and my 5 yr old daughter also liked it. I will absolutely be making this again.

Balsamic Cream Sauce

This was really good! I used 1/2 cup cream and 1/2 cup skim milk in an attempt to cut down the fat. I also did not have enough of the cheese so I had to add a handful of shredded italian mix cheese. This tasted wonderful on top of baked chicken and grilled asparagus. I think this would be wonderful on pasta in place of an alfredo sauce.

Artichoke Chicken

I am giving this recipe its rating based on making it as the recipe stated, only thing is i added some chopped roasted red peppers, just because I had some. Now, back to the recipe...as for the flavor, it was very good. The only issue is that while cooking...the mayo and cheese melted into about 2 cups worth of oil leaving a wierd slime on top of the chicken. It was very upsetting. I plan on making this again except I will substitute some of the mayor with sour cream, in hopes of ending out with a sauce, and not artichokes floating in oil. Hopefully this will be better.

Garlic Cheddar Chicken

This was ok, but nothing special. Just tasted like chicken. I followed the recipe, except adding more garlic. I also crushed up a few cheese crackers i had left and added to the bread crumb mixture. I will not be making this again.

Chicken In Basil Cream

Followed this recipe exactly and it was absolutely wonderful. the pimentos and the Basil gave it such an incredible flavor. Tastes like something you would get at a restaurant. Next time I will pound my chicken thin as the breasts i had were extremely thick and I had to put them in the oven for a while to cook. (in order to prevent burning) Served with asparagus and crescent rolls!

Baked Salmon II

I made this last night because my bf was requesting a baked salmon dish. I do not care for fish at all (but i love sushi lol) but made this anyways. My bf thought it was ok, and so did I. He likes fish. It was actually a really pretty dish though. I did follow some suggestions and coated all sides of the fish with the sauce and breading.
