Easy Texas Chili

This is good stuff! I made the following modifications: used only 1/2 of an onion, 1/2 of a green pepper, omitted the beans, and used one 32 oz can each of crushed tomatoes and tomato sauce, and cut the chili powder down to 1/4 cup. I browned the meat, onion, and pepper, then mixed everything up in the slow cooker and let it simmer all day. It was great. I'll be using leftovers tomorrow night to make Frito chili pies!

Slow Cooker Italian Beef for Sandwiches

I know I am completely in the minority here, but I did not like this at all. The pepper was so overpowering, and the meat just did not have a good taste. I will stick to my go-to french dip recipe from this site.

Alice Chicken

This was very good. Here's how I did it: I did not marinate the chicken, just fried it up in some olive oil. When it was done, I topped it with the cheese, bacon (I used bacon pieces), mushrooms and dressing. Very good. Will definitely make again.

Creamy Jalapeno

Good stuff! I used jarred, sliced peppers (the "mild" ones)and chopped them up. I went easy on the cilantro, as we don't like it unless it's in salsa. Other than that, followed exactly. Next time, I will leave the cilantro out. This recipe is a good way to jazz up ranch dip.

BBQ Chicken Pizza

This was really good! I made my own crust (Garlic Lover's Crust from this site). I used 2 chicken breasts and sauteed them in olive oil, then chopped them up. I used Head Country BBQ sauce, and skipped the cilantro and red onion, using minced onion in place. I mixed the chicken with a little BBQ sauce before adding it to the pizza to keep it from drying out in the oven.

Buttery Rolls

Beautiful, delicious rolls. Followed recipe exactly, using my breadmaker. I did lower the oven temp to 350, though. And the rolls took significantly longer than 15 minutes to rise! Still, these rolls will be in my Thanksgiving and Christmas bread baskets this year. Goodbye, frozen rolls!

Oven Roasted Red Potatoes

I'm only giving these 3 stars. They stuck to the pan, despite the olive oil AND cooking spray. They didn't have a lot of flavor, and they never got crispy. I'll stick to "Easy Spicy Roasted Potatoes", also found on this site.

Magic Cookie Bars II

This is very easy make, and tastes pretty good. I give it 3.5 stars. I used a whole can of sweetened condensed milk, skipped the coconut, and used milk chocolate chips and semis-sweet chocolate chips instead of butterscotch.

Amazing Italian Lemon Butter Chicken

This was delicious, but time consuming! Definitely not a weeknight meal. I did not use the artichoke hearts or capers. I used more heavy cream than called for. I mixed the chicken, mushrooms, bacon and butter sauce all together and tossed it with the pasta. Very good stuff. Not too sour or lemony, just right. Great for a special occasion meal. I sprinkled parmesan cheese on top once the servings were on the plates. I served this with garlic bread. FYI: This does NOT reheat well. It just becomes a greasy mess the next day, so be sure to finish it off when it's fresh!

Easy Slow Cooker French Dip

This is absolutely delicious! I forgot to pick up a can of beer, so I used a little white cooking wine instead. The meat was so tender, it just fell apart. I did season the meat before cooking with some garlic salt and pepper. The flavor was awesome. I toasted the bread and put a slice of provolone on top. So easy, yet so good! My husband was in heaven! Thanks for a great recipe.

Sopapilla Cheesecake Pie

This is insanely delicious. I've been making crescent roll cheesecake for years, but this version is different from mine and SO GOOD. I only did a couple of things different. I did not have mexican vanilla, so I used regular. I did not use a rolling pin, as I never do when I make my version of this and have never had a problem. I melted the butter, cinnamon and sugar all together, then poured it on top. This gave it a delicious, candied topping. Also, I forgot to drizzle the honey on top before baking, so I just let everyone drizzle their own honey on top of their piece. I will make this many, many times!

BBQ Bacon Ranch Dip

My husband loved this, but I have mixed feelings about it. I did not use the tomato and green pepper. I used Head Country bar-b-q sauce, which is our favorite. I also used bacon pieces. I thought the bbq sauce was quite overpowering, so next time I would cut back on it personally, but my husband thought it was the perfect amount. The next day, I actually warmed this up in the oven, and I liked it a lot better when it was warm. My husband says this would have been a solid 5 stars if we replaced the bacon with brisket. I may make it again, and use brisket in place of bacon. A heartier meat such as brisket may help tone down the bbq sauce. I'm not giving up on this recipe yet, but I will be tweaking it!

Chocolate Caramel Pecan Pie

This was ok, nothing spectacular. I used heavy cream in place of cool whip. The caramel and pecan mixture was good, but the chocolate mixture was just bland. I'm not a big fan of semi-sweet chocolate, so that could be influencing my review. My husband also thought it was just ok. Probably won't make again.

Chocolate Chip Pie I

This was really good. However, I found that it was too much filling for my pie crust (frozen store bought.) I actually ended up with a mess in my oven because I put too much of the filling into the pie shell. My guests all enjoyed it, though and I will make it again, I'm sure. The only changes I made were to use pecans instead of walnuts, and I bought a crust rather than made one.
