Corn Casserole III
I have to give it 5 stars because it is the easiest thing on earth to make. A total idiotic moron could make this. I think it's supposed to be a bit mushy ... lots of corn flavor. It would be great with jalapenos and cheddar.

Mexican Chicken Kiev
This was AWESOME. The Mexican twist on this dish really works well. My changes - I used panko crumbs and added Italian herbs to them, and I substituted jarred sliced jalapenos for the chilies.

Spicy South Of The Border Spinach Cheese Dip
It was OK. Most people will probably not think this is very spicy.
