Best Tuna Melt (New Jersey Diner Style)
This tuna melt was AMAZING!!! The tuna salad had perfect flavor. I was nervous about onion in tuna but it was delicious. We used both Swiss and cheddar cheese and it tasted just like the sandwiches served right here at diners in the Garden State (I am from NJ)! Serve it up with chips and a dill pickle for a super-tasty meal. The tuna salad is delicious enough to be eaten by itself!

Libby's(R) Famous Pumpkin Pie
My two year-old daughter and I made this pie together and she had only one thing to say--"Mmm Mmm Pie"! She ate two pieces herself and the family polished off the rest. Perfectly spiced, light, and creamy. A definite favorite, my daughter cannot wait to make our next pie! We used a crust from the dairy section of the grocery store in a deep-dish pie plate which held all of the filling quite easily. My crust was browning too quickly, so I draped a piece of aluminum foil over the pie halfway through baking and it turned out great.

Jewish Apple Cake II
I have been looking for an apple cake recipe and this one is definitely a keeper! I did not change a thing--made it exactly as stated and it was awesome. I used Golden Delicious and Cortland apples. The cake was definitely sweet, but a nice compliment to the apples and cinnamon. I would not change a thing and will definitely make this again and again!
