They ended up like bran muffins. Very bland and didn't rise right. My daughter liked them but nobody else did.

Pretty good, but I imagine it would be bland. I tossed my veggies with the salt & pepper and also with some Tony Chachere's Creole seasoning (spelling on that? too lazy to get up and look) to give it some extra pizzazz. Also, since I greatly cut the servings down to 3, I only cooked them for a half hour.

This was EXCELLENT! I didn't have any cilantro, but it was still good without. One note - I added sour cream on top, but I wouldn't again because it started to cook by the time we were getting to the bottom of our bowls...however, since the recipe does not call for sour cream, I still must give it 5 stars. Served with mini quesadillas for dipping.
