i am originally from south carolina so grew up on good southern food and do still love that but have grown to love mexican food as well and no im not mexican lol

anytime i can make something new and the family doesnt groan how awful it is its a triumph...not really the greatest cook but like to try now and then

Mexican Tinga
was kinda wondering what a tinga was but decided to give this a try and....YUMMY!!! i was making for a group so added 2 cans mexican stewed tomatoes to 1 can peppers and it was perfect as far as hotness used 5 lbs boneless chicken breasts also added some garlic and cilantro. was a huge hit...will definately make again

Runza (meat pies)
When i am in a hurry to cook i use crecent rolls,layer on bottom then the filling you have here,and then layer of crescents on top and cook as directed on roll package. Great runza casserole in a flash.
