I love love this cheesecake, but honestly, I've messed up on it a few times. I guess the fact that it is so thick makes it difficult to get it done all the way through without making it brown on the outside. I've tried lowering the temperature and baking it longer, and I've done the water bath as well. I guess I need more practice. The times I have succeeded, however, makes it worth it. Superb cheesecake!
