Vegetarian Meatloaf with Vegetables
I've been making this from this recipe for a long time, it is a staple for holidays. My meat-eating inlaws devour this! A few adjustments to make it vegan: I use NRG egg replacer instead of eggs, drop the worchestershire sauce, and use soy or almond milk. It is fabulous!

Easy Guacamole
I have been trying to make guacamole for years and finally this recipe made it happen. One secret, I put the chopped tomato in a salad spinner to get rid of all of the liquid and that helped a lot so that the guacamole isn't too watery. This is delicious! Really yummy!

Roasted Brussels Sprouts
This is delicious as is. I've been trying to cut back on expenses and I used to buy these at the gourmet market for about $5 for about 8-10 (sold by weight). Since I started using this recipe I've been making them at home. My in-laws can't believe my husband actually eats Brussels Sprouts now. He doesn't eat a lot, but he eats a handful and that's a start! I let them roast for about 45-60 minutes
