Awesome Carrot Muffins
Good starting recipe. Some changes are a must though. Sounds like reducing the oil and adding apple-sauce works well. For my muffins, I reduced the oil to 3/4cup and added a little milk to replace the liquid. I reduced the amount of eggs to 2, instead of 4. I also added only 1 tsp of baking soda, 1/2 tsp salt, and 3 tsp baking powder. Don't forget to add vanilla extract (approx. 1-2tsp), this will add flavor and make your muffins appear to be sweeter than they actually are. If you are a sweet tooth, definately add more sugar or more raisins.

Japanese Okonomiyaki
This is the same way I make it, except I leave out the pickled ginger. The bacon can also be substitued for other meats, I have found ham and shrimp work (but bacon is my fav). You can also add some finely chopped up leek, which really adds to the traditional flavor. I serve it with Okonomiyaki sauce (brown sauce) and Japanese Mayo (it's like american mayo without sugar, so you can substitute regular mayo no problem)

Super Duper Oatmeal
So yummy! I used a frozen berry mix(blueberries, blackberries, and raspberries) the first time I made this, the second I threw in strawberries and bananas. A little vanilla helps the flavor.
