Homestyle Chicken and Biscuits

Delicious! Next time I would double the chicken mixture. After the initial 15 minutes of baking time, I placed the biscuits on top, covered with foil, and baked for 10 minutes. Then I removed the foil and baked for 10 minutes longer. Perfect biscuits!

BREAKSTONE'S Chicken and Sour Cream Enchiladas

Very quick to put together. Perfect consistancy- not too soggy, not too dry. Only thing I would add is the spray the pan first for easy clean up.

Curried Bean Salad

I just took this to a potluck and barely anyone ate it. It had way too much kick and way too much garlic even though I only put in 3 cloves. I will not make this again. Plus it makes a HUGE amount.

Slow-Cooked Sirloin

The beef turned out delicious and the smell while cooking was wonderful. Very easy to do before leaving for church. The only downside was the gravy tasted very salty even though I used very low sodium beef broth.

Pineapple Zucchini Muffins

Delicious! I used half whole wheat flour and half white flour. I also used applesauce instead of oil. The turned out great and my toddler loves them.

Pumpkin Pie II

This recipe is wonderful! I choose it because of being able to use regular milk instead of evaporated which I did not have. I have now made this about 5 times and sometimes I use mashed cooked sweet potato or mashed cooked butternut squash instead of the pumpkin. Both options turn out great!

Lasagna Spirals

Wonderful idea! The rolled up noodles made it far less messy to serve. The second time I made it I omitted the nutmeg. The taste did not belong. I substituted spinach for the broccoli and added grated cooked carrots as well. A great way to sneak in some vegetables.

Caldo De Res (Beef Soup)

This soup was just okay. I added a lot more cilantro at the end and that really added a lot of flavor. Although the recipe says it only makes 4 servings, I made it exactly as it is written and it made about 8-10 servings! My husband didn't care for it so I have a LOT of leftovers to eat...

Cornbread that is a Meal

This was very dissappointing, but I think it was my fault. Instead of using a 9x13 pan, I divided the batter into two 8" round pans. Even after doubling the cooking time, the knife still would not come out clean in the center! It was very gooey. My husband also did remark that it was bland even though I added one Tablespoon of chili powder.

Mushroom and Swiss Chicken

This dish was excellent! The chicken was very tender. It works with boned chicken as well, just cook it a little longer. My husband especially loved how spicy the cajun seasoning made it.
