About this Cook
I'm a newlywed who is trying to wean my husband from Hamburger Helper. I started tinkering with the stove when I was in 7th grade; Mom and Grandma thought it was best to learn at an early age. Unfortunately, I didn't pay too much attention to the cooking lessons, but adored baking. Hence, I was always the "baker" in the family. I grew up in a big hispanic family and when one cooks, its for everyone! I'm a proud military wife who has a wonderful/picky taste tester (my husband).

Raspberry and Almond Shortbread Thumbprints
Words cannot describe how easy and delish these were. I made these at the last minute for SuperBowl Sunday and they were a hit!! Now, I didn't plan out to make this, (it was decided on a whim) so I didn't have almond flavoring. I substituted with Amaretto liqueur in the shortbread and the glaze. I'm glad I did it, too. Also, I forgot about the raspberry jelly (again, I was very unprepared) but I did have strawberry jam. I'm not too fond of strawberry jam, but the hubby is and it was great enough for me to overcome my dislike. I did triple the batch (don't know why I did that, either) so I had plenty of left overs. I got lazy about over half way through and just squashed the dough w/o putting jam on. Again, still good that way, too. Next time, I plan to be prepared and buy the raspberry jam, but I'm keeping the Amaretto liqueur ;-)

Easy Chocolate Bundt Cake Glaze
Nice glaze. What it really reminded me of was the chocolate frosting of a donut at a bakery. Even the hubby said it. What I really enjoy best was it is a very versatile glaze and I can put almost any flavor in it. I thought I had vanilla, but didn't. I put in a little Amaretto Liqueur. It was still yummy.

Four Egg Yellow Cake
Great cake recipe. The first time I made this I was "multi-tasking" made a HUGE mistake. I was thinking I was putting into the flour mixture the suggested amount on baking powder, but after in was already in the oven it dawned on me...I put baking SODA instead. I knew I was going to throw that batch in the trash (and I did), but not before I tasted a sample. It was okay. I went ahead and made another batch with the CORRECT ingredients and I must say it was pretty good!! I just might keep this recipe as a base for something else. It was not as light and fluffy as boxed cake. It was a very heavy cake and seemed just a tad dry the next day even even though the cake was covered. I might just ue it as a bundt cake or something. I'll try to make again to see if it wasn't a fluke. It was still a very great tasting cake! It didn't even need the frosting I put on it. It isn't everyday I can say that.
